Tree recommendation- pink blossom

We have a small area we are making into a mini orchard. So far we have nurtured an established plum and apple and planted a medlar, plum, Mirabelle, 2 pears (one was supposed to be a red apple, the label lied...) and a crabapple. In other areas of the garden we have 3 dwarf apples and a hawthorn.

I'm keen to add 2 more trees, ideally fruiting. I'd love to find something that ticks these boxes:
Pink blossom
Happy with wind (garden gets blasted) and frost (frost pocket, midlands)
Tasty fruits
Not too big
Forgiving for amateur

Nice to have:
Autumn colour

Keen for ideas!

Brownlees Russet apple on a reasonably dwarfing rootstock
Pink flowered Chaenomeles (Japanese Quince)

What about a cherry tree? Or a nut tree - I saw pistachio trees online recently and now I want one.
I’ve bought fruit trees from Roots plants and from Direct plants, they’re all too young to fruit yet but they’ve all been healthy and grown well and they had a choice of rootstocks so you could pick a smaller variety.

For a frost pocket with wind, I'd say a morello cherry. Beautiful flowers (white, though, not pink).

If you want pink flowers and autumn colour, in the situation you describe, you are thinking of an ornamental tree. There are lots of beautiful options.

You don't want a Japanese Quince. They do have scented fruits, but they are also nasty to grow, no good for wildlife, and they invade drains/foundations very easily.

The obvious solution seems to be to go back and get that thing you originally wanted. Or is it not pink blossomed?

Apparently Scrumptious has pale pink blossom and red fruit.

I'm not sure the fruits are especially enjoyable for people to eat, but take a look at Malus Profusion Improved. It has a deep red brown trunk, purple-y leaves and an abundance of vibrant pink blossom, which develops into dark purple smaller fruits.

Or a nut tree - I saw pistachio trees online recently and now I want one. Do they fruit in the UK?

@MereDintofPandiculation
I assume so 🤷🏻‍♀️ the site I saw them on seems to suggest they will. (Link here if you’re interested)
