What are my options? Leaving my beloved plants!

I have a huge balcony with about 12 pots of plants and flowers.

It's very sunny and warm (UK but south facing).

I need to water it all every day.

I'm going away for 2 weeks in August to look after my grandma.

What on earth can i do?! Will they all die? Is there any snazzy solution?

My bil wins garden competitions and he puts something in bottom of containers that absorbs water and then slowly releases. They look like size of chicken nuggets and are like a gel. They swell up when you water so water does not just drain through pot. Also as a previous poster suggested cut bottom of 2 litre coke bottle and make a few holes in lid. Put into pot lid first and fill up with water. It should trickle through slowly whilst you away.

I have laminate floor so fine to have in the lounge. We will have the blinds down though and the lounge is a sauna too! Basically it's all floor to ceiling windows.

What is deep stone mulch?

Just a layer of gravel over the top of the pot, an inch or so deep. I get the bags of 20mm stuff from Wickes. Makes a massive difference.

Can you buy a couple of really big plastic trays (we got some from a garden centre which were about 80cm square) and use them in lieu of a bath in your coolest room with windows?
