Quick gap crop for polytunnel ?

I've got a couple of big gaps in raised beds in my polytunnel and wondering what at this stage could I sow or transplant in?

Total beginner so making lots of mistakes as I go. Tunnel far too hot for lettuce which all bolted and the pak choi I thought would do well has started to bolt too.

Feel like it's kind of late on for starting anything quick that won't bolt in the temps? Tunnel day time temps seems to be fluctuating between just under 20 on cloudy days to approaching 40 on a sunny day, even with both doors open for ventilation.

Am I just too late this year to fill with things that won't wilt or go to seed?

To be fair the failures have given me lots of ideas for next years summer months. More tomatoes more peppers more strawberries!

You could take the armpit cuttings from your tomatoes and grow them on to get... more tomatoes?

Dwarf beans?
Courgettes?
In a month or so, you could probably start sowing greens again.

Thespottedzebra thanks, also thanks for link I had no idea what you meant at first!
I've got some courgettes, cucumber and squash on the go as well as chillis and sweet peppers which are all doing ok but started ages ago.

I'll investigate the armpit tomato idea although have been pulling the side shoots off when They appear to channel better growth...Confused

There will be more armpits very soon!

Stuff you sow now (courgettes etc) grows SO MUCH quicker than the stuff started in the cool, not sunny times. It just needs to be something that doesn't take ages to to ripen.

Following this with interest! We are new to a polytunnel this year with raised beds. We had sugarsnap peas which did well but are now keeling over. I have cucumbers and also tomatoes which are fine. I put a spare courgette in there this week and its doing well. The high temps are a problem and we cant get up to the allotment every day to open up!
Spring onions are consistently doing well as are radishes but I feel like I am not using its potential. I'm also looking for ideas for next year.
Dwarf french beans could be a possibility. Leafy greens seem to bolt as you mentioned.
What about squashes or pumpkins?

Janedownourlane that all sounds lovely! Very similar to what I've got.
I've thrown in LOADS of borlotto beans to make use of space and we're doing squash, courgettes, cucumber, aubergine, chillis, peppers, tomatoes, melons (half dead Blush) and strawberries. Spring onions too. I had to dig out my lettuce as they all went to seed and the pak choi is the same.

I think tbh I've gone overly ambitious with the tunnel. It's been a family investment and we've been lucky enough to get a fairly large polycrub so it holds a lot!
We're on fairly exposed Scottish west coast on a wee island so get lots of gales and wet weather so wanted to do a lot of stuff in the tunnel to make sure it doesn't rot/get blown away/eaten by the squillions of rabbits and mice and things that are about. Problem is I think I've been trying to cram in cold weather stuff when tunnel May-Aug (possibly longer?) is too hot for a lot of things.

I did the cramming in and planning of stuff when we didn't have any outside beds and weren't sure if any or how many we would do as well as tunnel. Now we've got a good amount of space outside for onions leeks carrots kale and brocolli (tunnel calabrese brocolli Batch went to seed early May so started again)

It's all very experimental as i only started growing things in February! All the gear and no idea firmly applicable to me in this instance I think Grin
