Changing from fence to hedge

Hi all, this seems like a really stupid question, but I can't quite work out the logistics of planting a hedge.

For context - we're house hunting at the moment and we saw one at the weekend we liked. On street view their garden had a hedge down the side separating it from the pavement (corner plot). However when we saw it they've replaced it with a slightly naff 6ft fence, massive gaps in the slats and already looking tired despite being only a couple of years old. Apparently installed so they could have a gate to the top part of their back garden (it's on two levels)

If we were to move in I'd want to rip it out and plant a hedge again. However that seems to mean leaving the back garden completely exposed/open whilst the hedge is planted and growing. Is there some sort of interim solution? The house is in a nice area but the pavement gets a reasonable amount of foot traffic.

Would two amateurs be able to take down a fence and plant a hedge in a day?(about 12 ft) where is a good place to buy relatively well established hedge plants?

Alternatively, are there any climbers that would quickly and attractively cover a whole fence without damaging it long term?

This isn't a make or break it decision about the house and we may not even secure it, but I'm spending a lot of lockdown planning/day dreaming interior/garden design.

One of our neighbours did this and used a temporary fabric fine net/mesh which was secured with metal stakes. As the hedge grew they could easily move the stakes. It only really took a year or two for the hedge to be bushy enough to provided privacy.

It would be worth checking if they removed all the stumps/roots when they removed the originally hedges. My bet would be they didn't and it'll mean that it's not that easy to replant any hedges.

`If the stumps are still there they may regrow. We had to take down a very old ,dead, box hedge, (not box blight). It is regrowing with no problem ,or planting, Grin.

Or Maybe you could put wire fencing along and plant honey suckle which grows fast, then you can wind it into the wire, to cover fast. We've done it, with lavender at the base.
