Under planting Olive trees

Moved house last autumn in London and have a good sized SW facing back garden. I've inherited 3 fairly mature Olives planted in a raised bed next to the patio outside the kitchen.

They are fantastic and I don't want to distract from their impact but they are currently sitting in unweeded soil and I want to 'finish' the bed properly.

Given how big the roots will be, would you
A) underplant with something Mediterranean (?) that can tolerate the dry dappled shade in a warm spot
B) cover the soil with some stones/gravel to keep the weeds down and make the bed look a bit more finished
C) something else?

Any ideas appreciated.

I wondered about lavender but didn't know if it would tolerate the shade of the canopies?
