Parsnips - if I <ahem> forgot to harvest them after the foliage died down..

and now it's growing again, do I pull them up now (will they still be edible?) and either eat or throw away, or is there any point leaving them be, as they're all bushy and enthusiastic and the only thing in the veg patch so far this year.

I did this by mistake last year and ended up with an eight foot tall parsnip forest.

Sadly the roots were not any bigger and were way too tough to eat.

I'd pull them up now you might still manage soup out of them - maybe leave one in and collect the seeds?

Grin at 8 foot tall parsnip forest! Def don't want one of those.
I'll pull them up then, see if DH can make something edible out of them and plant something I won't forget. You'd think Christmas would be reminder enough really Hmm
I have received 5 raspberry canes in the post today, which i had also forgotten I'd ordered Blush so maybe I'll plant them in that row instead.

I pulled my last ones up just a few weeks ago. Roasted one and souped the others. A little tough but otherwise still ok.

I pulled my last ones on Thursday, one was 800g and 16in long!
If you have space, leave at least one to grow as ladybirds love them. I left one the other year and at one point it had 50 ladybirds and 30 ladybird larvae on itGrin

So it might not be too late Hmm
My plan is to tackle them tomorrow so I'll just see how the first one looks I think. If they're ok I'll have to hand them out free to the neighbours as there must be 15 out there.

Oh god, I've still got loads. They were tough and stringy before Christmas though, and quite nice since. I wonder why that is?

Parsnips get sweeter after a good bit of frost.
I made parsnip crisps, with a bit of salt and paprika, and we ate them watching the rugby.

Oh, don't give them away pepper (unless you really like your neighbours)! Make some spicy parsnip & apple soup and freeze it in batches.

That does sound good!
I do like my neighbours actually Smile they let DD (3) collect eggs for them today and she retrieved the biggest egg i've ever seen - and the smallest!
So I'll probably give them a couple anyway (unless they're rank of course).

We found one in the veg patch that we'd obviously forgotten about. It was the only one left and was an absolute monster. We think it ate all it's fellow parsnips. I chopped it up, cut the tough middle out of it and roasted the bits with butter and honey. Yum.

Today we are having parsnip and spicy apple soup (thank you for the suggestion blackpuddingbertha), followed by roast lamb with roast parsnip, MIL is coming for lunch and for Mother's Day we have got her a lovely big bag of parsnips plant.

My mouth is full of one of my last parsnips right at this very actual moment! (good flavour, erm-challenging texture - roasted).

Inspired by this thread, I too may soup the remaining stragglers...
