What are your favourite Nigel Slater recipes?

My culinary hero is being discussed on a couple of other threads and a few of his divine recipes have been mentioned.

The standout ones for me that I make regularly are:

  • Brownies
  • Lemon rosewater and pistachio cake
  • Onion and taleggio tart
  • Spicy pork meatballs

What are your favourites?

I don't really use his recipes, although I have a couple of his books. I just find that he is too centred around meat, fish and salad when what I mostly need is veggie main meals.

Lemon, rosewater and pistachio cake sounds lovely though.

do you have Sarah Raven's Garden cookbook? It is brilliant for veg main meals

I love looking at his books but so many of his recipes have lots of butter or dairy and I try hard to do main meals without dairy as little DD is allergic.

and the fatty pork with lentils although I just use sausages instead of the pork

have a few of his books but don't use much as not the healthiest way of cooking.

Tender - his veg one has loads of healthy recipes in, and Kitchen Diaries has a really good mix.

taffetacatski - It's actually called A Really Good Simple Chicken Supper and is from Real Food. Basically chicken pieces fried for ages in lots of butter! Had it when we were staying with some friends once and DH ordered 3 Nigel Slater cookbooks the following day! We make it often. Well DH does. Very yummy. DS loves it.

I am a huge fan of Real Fast Food, his first book, which is all stuff you can genuinely cook in under half an hour and has a list of 'good things to put in an omelette' and a section on tinned fish as well as more standard recipes. Before he got a little bit too lifestyle for me "so I picked some fresh peas from the garden and sat shelling them in the evening sun..."

Oh, and Toast, his autobiography, is a good read.

I love the "really good simple chicken supper" too. Also the lamb shanks with aubergine (which makes a brilliant side dish if you do it without the lamb. Often a side to, erm, roast lamb.)
