  • and keep it clean please!

I have found a jaggery nuts recipe but not much else. I've been given a block of the stuff (weird present, huh?)

Any ideas?

it is basically unrefined sugar so you can use it in lots of things that need a spoonful of sugar. I use a spoonful of sugar in chillies and curries to sweeten the tinned tomatoes which can be a bit bitter. look on the bbc recipes website ,they may have somethingwww.bbc.co.uk/food/recipes/jaggerycaramelisedwa_86678

alot of indian supermarkets have recipe books with jaggery in them...but i would just use it as a sweeetner in sauces, either savoury or sweet.

As alypaly says...also use it for quick salsa / thai type thing with lime juice, thinly sliced onions, you can do a sort of sweet and sour mix - add chillies as desired to make it hot etc. It has more flavour than just plain sugar.

My cousin in India used to wax her legs with it! She used to melt it in a pan with lemon juice until almost caramel/toffee consistency then once cooled, spread onto her legs and whip off with cotton strips... suppose a form of DIY sugaring lol?

Failing that of course, works really well in any tomato based curry - a small chunk helps to balance out any acidity from the tomato
