Green vegetables...

... I don't think we eat enough.

We eats lots of pasta type meals, so eat more tomatoes, peppers, onions, mushrooms etc. I want to give DCs more green vegetables butI am not really keen on traditional English boiled veg type meals (think childhood school dinner traumas etc - yuck).

Can anyone recommend me any good meals with flavour and with green veg? Thank you.

spinach and potato curry,
spinach quiche,
creamy chard pasta,
butter bean and greens soup,
curried potatoes and cabbage,
broccoli and rice bake,
broccoli cheese,
easy cabbage rolls,
beans with greens
kale and chorizo soup
spinach fritatta
spring greens/cabbage finely shredded and sauted in butter and sprinkled with lemon and chilli flakes
stirfry with shredded pak choi, veg and chicken
chicken fillets stuffed with spinach and soft cheese
spinach pancakes served with tomato soup

broccoli pasta haven't made this myself yet.

Thanks so much. I always forget to cook spinach and its one of my favourite vegetables. Broccoli cheese also a v good idea as DD loves broccoli and DS is less keen on veg but does love cheese!

Am off to amend my meal plan for the week

You can buy frozen spinach in sort of of ice cube helpings which you can add to your pasta water as you cook, then drain (using a sieve not a colander ) and serve with pesto.
Bingo! Iron and green veg goodness and no hassle (Added bonus that the kids often don't know it's there)

broad bean and pancetta risotto very delish at this time of year

also Nigel Slater does a very simple dish of squeaky fresh green beans tossed whilst hot in brie/taleggio with torn up parma ham, served with crusty bread

if you grow your own or can get to a pick your own, frshly picked green beans or peas are so sweet and its lovely to eat them so fresh, have a big bowl of say sugar snap peas on the table with some dips eg soy, vinaigrette, whatever.

pea soup is also very good

If you count peas, beans and things I have some more:

pea and mint soup
runner beans or green beans cooked in sesame oil and chilli flakes
green bean risotto
green bean bake (cooked green beans and onion baked in a thick mushroom sauce with a pile of grated cheese mixed in and topped with breadcrumbs)
slow cooker ham houghs green beans and potatoes (cooking liquid makes a good stock for lentil soup)
pasta with peas, lemon juice and cream cheese
pasta with peas, bacon, tomatoes and chilli
pasta with peas, bacon and cream
green beans, peas, potatoes and ham in cheese sauce
peas mashed with soft cheese and garlic and used to top crusty bread
peas mashed with mint and olive oil and used in the same way
beef and broccoli stir fry with noodles
broccoli soup
pasta with smoked salmon, peas, lemon and cream
chard flan
chard, leek and bean soup
runner bean chutney( a nice side in the winter)

The other day I made spinach and parmesan bread using the 1/2lb of spinach left over from my spinach lasagne. It's very nice for sandwiches.

Can you tell that I grow a lot of peas, beans and spinach type things?

Wow, this is fantastic. It should give me new things to try for weeks.

I did broccoli cheese tonight and DS (2) told me it was lovely!!

The Jamie spinach and marscapone recipe looks fab - in fact they all look really good. Thanks for so many brilliant ideas.
