Silverside beef joint - pot roast

I need to cook a silverside beef joint (smallish - will feed 2 or maybe 3 at a real push) for tonight, I have a roasting pot (with fitted lid) and think this is the best way to cook it. Can anyone recommend a recipe which includes guidance on how much in advance i need to put it in the oven so it is ready around 6 - 7pm tonight. I wonder what veg i need to roast around it, i only have carrots and beans and some corgettes in the frige at the moment but i do have some beef stock. thannks in anticipation

i would imagine that it will take approx 2 1/2 hours to cook it
i don't have a recipe as such but this is what i'd do with the ingredients that you have
set oven to 140c/275f/gas mark 1
sear the joint in oil (dripping if you have it) then remove and lightly brown carrots and courgettes
remove veg
empty all the fat from the pot
return joint to the pot and arrange veg around it
add around 10floz hot stock,seasoning and bayleaves/thyme
cover pot with foil and the lid and bring to a good simmer
as soon as it reaches this point place the pot in the centre of the oven
meant to say that you could lightly brown the beans too but i would be inclined to add them towards the end of cooking time as i don't like mushy greens!
when the joint is cooked remove it(and veg) to a warm serving plate
bring the liquid to the boil until it reduces slightly
make a roux of 1 tbs flour and 1oz butter and lightly cook it for 3 mins then slowly add the liquid stirring well until the sauce thickens
HTH
