Mint - how do best keep it and what can I do with it?

Have been given a load of fresh mint leaves. How should I keep them? And can they be frozen? And what can I do with them other than make mojitos?

Cut up some fresh pineapple.
Cut up some mint and add.
Scoop out flesh from a passion fruit and add.
Bit of maple syrup (how much depending on sweetness of pine)
Soak in rum (sorry, more alcohol, but a dessert not a drink).

Chill in fridge.

Eat.

Mint is lovely with aubergines.

Dice the aubergines. Gently fry the garlic. Add the aubergines. When they are ready you can add as much chopped mint as you like.

You can eat your aubergines with pasta. Or to go with some oven cooked fish.
You can also add to your aubergines toasted pine kernels and capers.

I make up a big jug of iced water and add lemons and mint leaves...yum. You don't even feel like you are drinking water, find it ahrd to have 8 glasses a day otherwise.

Mint Jelly. Easy, you just need some Bramley Apples, Sugar and Mint. I made Rosemary jelly the other day, same thing really, dead simple. Just 'Google' for a recipe.

we had green beans, and asparagus (steamed) then chucked together with microwaved (frozen) peas with mint butter with tonights tea - Chopped mint into butter log - you can freeze the butter and then slice as you need it. I would also make tzatziki with 0% greek yogurt, cucumber and garlic.

to keep it - strip bottom leaves off stems and put it in a glass of water (like cut flowers)
