dinner ideas for hot weather

Looking for some new ideas for dinners to have in this heat-not enjoying being stuck in the kitchen with the oven on!

Have done the usual with salads, pasta salad etc,just wondered if there was any other cold meals I haven't thought of??

As well as totally cold stuff I think the 'flash it under the grill' option is a good one. Things on skewers, for example don't take 10 minutes and nice with salads.

Rainbow trout, grilled, with new baby potatoes and watercress salad;
Grilled steak, sliced on top of rocket salad with parmesan shavings;
Grilled sardines;
Halloumi and pepper kebabs;

was just about to post with this question.

my dd doesn't really do sandwiches and neither do I. She is teeny so I have to make sure she gets enough carbs and fat in. Not easy!

A fave in our house is cheesy chops. Pan fry chops til they are almost done, then mix grated cheese with a teaspoon of wholegrain mustard and a splash of milk, put it on the top and grill for a minute.

Serve with salad.

I agree with the jacket potato (with your choice of filling) and salad suggestion, or to take advantage of the weather if you have a garden and barbeque, some simple veggie kebabs with a pasta salad is a great quick dish. I'm trying to eat out as much as I can during the hot period; I love going out to a restaurant of an evening and sitting outside with your meal and a glass of wine. Lovely!

make a big salad with some strong tasting leaves in it e.g. rocket, baby spinach

toss in some french beans steamed or sauteed with garlic

dress with a strong dressing: I like something mustardy and sweet (e.g. mustard and balsamic vinaigrette)

Get a nice and very fresh piece of beef (fillet is ideal) with lots of seasoning and perhaps some chopped rosemary pressed into the outside. Sear in a very hot pan, so it's only just done on the edges

slice beef thinly and add on top of salad

add shavings of parmesan if you like

serve with good bread if you need carbs

what about good old scrambled egg on toast, beans on toast with grated cheese, cheese and ham toastie, pasta bake topped with cheese. Homemade pizza.

All a fav with DS at the moment, he is 3 yrs old. Can you tell he loves cheese!

avocado, haloumi and tomato salad with lots of bread

Bruschetta - chopped tomatoes and mozzarella on top of a piece of toasted or grilled ciabatta with olive oil and pesto drizzled over
