Left over sirloin steak - what to do with it?

I'm a vegetarian but my 9 yr old twins are not. They're very fussy eaters and have stuck largely to the 'breaded fish/ breaded chicken' diet for years now. I've virtually never cooked meat - other than the breaded variety but recently branched out, at their request and bought some sirloin steak.

Try one - they LOVED it and ate it voraciously and I thought - at last, they're eating normally.

Try two - today's lunch - DS2 ate 3 small cut up pieces and DS1 ate quaretr of a small cut up piece. I'm not left with lots of leftover, cooked, pieces of steak. No husband or dog to feed them to .

I have no idea (as a vegetarian) whether it's safe to put the leftover cooked meat in the fridge and re-heat it for another meal or add it to something else (not that they'd probably eat a stew with it in anyway)...or if, once cooked and cooled down, you can't put in fridge and cook later? I'm worried about all those nasty things that can grow in foods, especially meat and fish - once re-heated - but I'm completely ignorant really as to whether or not I should be concerned.

So, can I keep the meat and re-use? IF I can, what can I make with it at another meal time?

It's nice in a big stir fry - cook the veggies, serve a portion for yourself then add the meat to what's left (heat it through in a separate pan). It should be OK if kept in the fridge until tomorrow.

If you don't think they are going to eat it i the next couple of days then i would freeze it and use it the next couple months. Reheat in gravy.

Lizzie - sirloin steak in gravy May you be forgiven.

Solo, you could chop the steak up in to even smaller pieces to make sandiches with. The steak will be safe in the fridge for a day or two. Chinese takeaway containers make excellent storage for leftovers.

Alternatively, finely chop an onion and fry in butter; do the same with a clove or two of garlic; chop or slice some closed cup mushrooms in to reasonable size bits and add to the pan; season & cook until all soft; add a splash or three of cooking brandy and reduce - stir frequently; add double cream (200ml ish) and bring back to the simmer; when reduced back to a creamy consistency, remove a portion for yourself (mushroom stroganoff to a fashion); then add the steak which you have previously chopped in to thin strips in to the sauce for beef stroganoff for the DCs. Serve with rice or pasta. If you want a bit extra bite, add a level teaspoon of Dijon mustard or L&P sauce to the cream. Enjoy!

There is only one thing to do with leftover beef in our house: Thai beef salad. You can adjust the salad bit and the seasoning bit to fit the kids' taste.
