Tea cup of plain flour
Tea cup of milk
1 egg
few drops of cold water
salt & pepper

The secret of having good yorkshires is not just the mixture ,its having the fat really really hot when you come to cook them.

I have to add that although i used to use tcup method ,i now just bung it all in a jug and guess when its correct mix.

Thanks ladies i wish i could just guess it mummylin but iv actually gotten worse the more i try them not better! It really is a fine art ya have to get your batter just right but mostly its about knowing your oven isnt it? Mine have been beautifully risen but too brown on the outside and doughy/eggy on the inside the last couple of attempts i think i need to lower the temp to maybe 200c? (Fan oven) and now iv your recipes to try out so hopefully il get it! thanks ladies

used the Delia recipe - made sure they sizzled when pouring in,cooked at 22c. However they are very biscuity - do you think it's the oven temp? oohh, thanks for the help.

Use the cornflour recipe - 90g cornflour, 4 eggs, milk. Cook as normal - they never, ever fail to rise and taste fab !
