Cake for picnic on Sunday

Hi all,

I have promised to bring a cake to a picnic on Sunday for 15 people. I need to make it on Saturday morning, and am concerned that, if the weather stays as gorgeous as it is now, it will be an oozing melted mess by the time we come round to eating it.

For this reason I have ruled out any sort of filled sandwich cake. What I would really like to make is a cheesecake - is that going to just disintegrate? Also, as I'm pregnant, would I be able to eat it after it had sat in the sun for a while? (I'm not going to make something that I can't eat!!!)

I'd like to make something summery and fruity (as opposed to banana/carrot loaf cake things)... does anyone have any suggestions?

yes I'd go lemon drizzle keeps really well and can take a bit of bashing

or Delia has a lovely summery lime and coconut one

or I have a recipe for a brilliant all in one orange and almond cake thats very transportable and keeps well

viccy sponge would prob be ok, in fact a filled on is OK just not iced on top as then its difficult to transport

or you could go tart - ie bakewell or easier to eat is almond slices

or I have a lovely raspberry almond madeira loaf recipe too

Ooh, what brilliant ideas (and thank you for helping me know what LDC is.. I feel a bit thick!).

Bakewell tart is a lovely idea. In fact, all good... I love the sound of the raspberry almond madeira loaf... yum!

My sister in law who is hosting the picnic is famous for her lemon drizzle cake, so I may pass on competing with her on that one!

Is your rasp/almond loaf recipe online somewhere?

Here it is:

Raspberry and Almond Madeira Loaf

175g softened butter
175g caster sugar
1 tsp vanilla extract
3 eggs lightly beaten
50g flaked almonds
grated zest 1 orange
100g plain flour
100g self raising flour
2 tbspn milk
200g raspberries, fresh or frozen
icing sugar to dust

Preheat oven Gas 3/160 C. Line 20cm cake tin. Cream butter and sugar til light and fluffy, then slowly add eggs, beating all the time. Set aside a few almonds. Crumble the rest and stir into the batter with the orange zest. Fold in sifted flours and milk and then all but about 8 rasps. Pour into tin and level, then arrange remaining rasps on top and sprinkle on remaining almonds. Bake for 1 h 15 mins ( this is what recipe says, in my oven it needed 1hr 45 ). Skewer in middle should come out clean, top spring back etc. Cool in tin for 10 mins then turn out. Dust with icing sugar.

My MIL and FIL, both cake aficionados, were mega impressed when they tasted this.

oops its not a loaf don't know where I got that from. its a cake. 20cm round tin. hey ho.

I normally make plain madeira in a loaf tin, maybe thats why I am confused......

Here's a nice raspberry and almond cake- not a madeira one, but still yummy.

cordiality if you want to go with a cheesecake then delia has a really delish strawb one in her 'summer collection'
i think that it would transport well in a cool bag too
TC i will def be having a bash at your raspberry madeira cake
btw was pleased to hear that your party was a success..

< quick hijack > thanks blonde! I didn't do the souvlaki in the end, but am still hankering after it, so will have to have another do soon.....

DH also liked the rasp madeira cake and commented as much. Tis rare he comments on cake.
