Foolproof vegeterian quiche recipe needed pls

Ive never made quiche before but need to make one for this weekend- a veggie one so preferably roasgted vegetable (nothing toooo cheesey).

Please could a kind soul give me step by step instructions on the making of?

Pastry: 175g/6oz plain flour, plus extra for dusting, salt, 75g/2¾oz butter, plus extra for greasing

Mix it all in food processor add few spoons of water until it comes together. Chill for 30 mins. Take it out of the fridge roll line a dish put greaseproof paper on it fill with baking beans and chill again for 15. Bake in 200 or gas 5 oven for 15 mins. (or just buy some pre-made)

Filling 300ml of single cream, 3 eggs, 200g diced cooked carrots, 200g chopped cooked broccoli, 90g cheddar cheese.

Fill the pastry with your vegetables, Mix eggs and cream together add some seasoning, pour it over the vegetables and cook for 40mins on 180 or gas 4.

You can use any vegetables you like, can do mushroom and spinach with thyme, or asparagus and goats cheese.

You'll be fine if you are worried buy pastry instead of making it cos it can be tricky for the first few times. Other then that you'll be fine.

oh even I can do this and am no nigella

buy a pastry case

shove some pan fried or roasted veg in it

pour over some egg and milk mixture and top with cheese

Make shortcrust pastry. Stick it in the fridge for a bit then roll it out and line greased flan dish. OR unwrap packet of ready rolled and line greased flan dish.

Prick it all over the base then bake for about ten minutes.

Meanwhile fry up some red onions (2 big ones)really slowly in a bit of oil or butter. After a while ass a teaspoon of brown sugar and keep cooking slowly until they go all caramelised and lovely. Add some chopped fresh rosemary or thyme.

Spread the onions over the part-cooked base. Now cover the onions with a layer of grated cheese - strong cheddar or gouda work well.

Now beat together three eggs, a splash of cream and a bit of salt and pepper. Pour this over the onions and cheese.

Bake until done - i like it v well done but some people like it to still have a wobble to it.

Make shortcrust pie case as above. Meanwhile, chop a red onion finely and fry in butter until soft. Stir in a bunch of chopped spinach or chard and cook until wilted. In a bowl mix a small tub of natural cottage cheese with 2 eggs, some nutmeg salt and pepper. Spread the spinach mix over the bottom of the pie case, top with a couple of sliced tomatoes and pour over the egg mix. Sprinkle some grated cheese on top and bake for about 1/2 an hour at 180 until set and golden.

This doesn't have a strong cheesy taste and lets the flavour of the spinach/chard come through.

The quiche was delicious! (If I say so myself). had been hoping to have left overs for the next day but it was all gone in about 5 minutes.

The only thing was that the red onions I used (which I had caramelised on the hob first) went a kind of bluey-grey colour once the quiche had been cooked in the oven. Which didn't affect the taste but did make it look a bit odd. Does anyone know why this happened and how to stop it happening again?
