I love making fairy cakes but can anyone tell me how i can get a flat top on them, they always come out pointed and i have to cut the tops off, so i can have a smooth top for the icing.

I'm sure I found out the answer to this a few months ago by searching past mumsnet threads! Or possibly just by googling. It is possible. Good luck in your quest for the flat-topped fairy cake.

Lucky you have that problem, I get the issue of them not rising properly - look nice when in oven, sink once I take them out.

I think a way to make flat tops is to flatten the mixture, then make a dent in the middle with the back of a teaspoon.

If coating in iceing, just slice off the top and eat the left overs!

thanks for all your messages, i will try the spoon method see if that works. cutting the tops of is great but that adds to my waistline.

Many cake that peaks at the top and lower around the edges is caused by the heat of the pan. ie the edges of the cake in the bun tin are very hot whereas the middle is cooler. Hence the sides are heated quicker and set too quick without rising. The middle is cooler and has the ability to rise.

Make sure the fan assisted is off and lower the temp a little. Are the cakes too high in the oven too. It also depends on the mixture. Again try to dip the middle as said.

Mine rise too but I dont worry too much.

I wonder if the thicker fancy cake papers are better than the thin thin ones you get? If the cake mixture is slightly above the bun tin I wonder if that helps??? I may try this out.
