Beetroot in the veg box - what do I do with it?

We're on our 3rd week of getting a veg box now. DD is 6 months old and I wanted to be able to give her fresh, seasonal, organic veg so we now get a weekly box. DS is 3 and a very good eater so he'll benefit too.

But I'm not very adventurous with my vegetables (another reason to get a box, it forces me to try new things and share them with the children) so I always knew that sooner or later there'd be something in there that I didn't have a clue how to use - and it's arrived - Beetroot!

I like beetroot but I've only had it pickled or in a bagged salad, never in it's raw form.

I've got two large apple sized beets - can anyone suggest something to do with them?

I've steamed them before (whole or halved, depending on size) and sliced and dressed them when cooked and cooled down, to make a salad.

There is webiste Ilovebeetroot.com (and I do), which is full of fab ideas. Love em roasted but I had a glut last year from my BIL's allotment and I boiled them and ate them straight from the pan. yummy.

Is your entire kitchen red kveta? Have to say I'm a little worried about giving the DC's beetroot in my very white kitchen with the very white table!!!

I need to find a cake recipe...anyone know of a good one? I'm supposed to be being good though. 5 weeks until holiday and a lot more weight to lose. If only it didn't sound so yummy!

this is my absolute fave beetroot thang

Nigel Slater's carrot, beetroot and seed salad. Enough for 4 as a side salad.

For the dressing:

100ml lemon juice

a tsp caster sugar

3 tbsp olive oil

1 tbsp nam pla (Thai fish sauce)

For the salad: 100g mixed seeds (pumpkin, sunflower, linseed or sesame)

4 medium-sized carrots

2 small or medium-sized beetroots

Put the lemon juice in a small mixing bowl with half a teaspoon of sea salt and several grinds of coarse black pepper. Stir in the sugar until it dissolves, the olive oil and the nam pla, then set aside.

Put the pumpkin, sunflower and linseeds or sesame into a dry, non-stick frying pan and cook over a moderate heat until they smell nutty and are starting to turn a toasty gold in colour. Remove from the heat.

Scrub the carrots and push them through a food processor fitted with a coarse grater attachment. Toss them quickly into the dressing so that they don't have time to discolour. Peel and trim the beetroots, cut them into quarters and grate them. Toss them with the carrot and the toasted seeds, check the seasoning and serve.

Just been told by a fitness instructor fried of mine that beetroots can help burn off stored fat!!

That's it, they're all mine! The kids can have the broccoli

What is it with the veg and wee thing? Asparagus makes it smell too. As do Sugar Puffs (although obviously Sugar Puffs aren't vegetables)

Beetroot juice brings down blood pressure..... I sometimes juice a beetroot with a few carrots, apples and parsley in the morning. Slightly alarming colour but tastes great!

Beetroot dauphinous (sp) is amaizing! Perhaps one to save till autumn and wooly jumpers rather than pre hols!

you can put them crated or finely cubed in a curry-they make the curry go that pinky red you can only usually get from takeaway and add an interesting sweetness too.

ha ha, I also just had my 1st veggie/fruit box and wondered what on earth I would do with 4 beetroot...well, I just enjoyed my 2nd bowl of beetroot soup with a big blob of creme fraiche & horseradish...also gave it to my 7mth old mixed with fresh apple puree...also from the box!
Recipe:
1kg of beet - peeled and diced
1 onion & 2 garlic cloves - peeled & thinly chopped
2 litres of veg stock
...sweat all veg in little olive oil 15mins
add stock and simmer for at least half hour or until beets tender
Blitz when slightly cooled
Mix 1tblspn creme fraiche with 1 tspn horseradish.
Delicious!
I made half the quantity and made 2 large bowls of soup and 6 decent portions for ds.
...was from a Sainsbury's card...3 things to do with beetroot.

I bake them,washed and trimmed but with a bit of leaf stalk still on or they bleed a lot,in tinfoil,at a very low heat for about an hour and a half,and then make a salad with sliced orange,orange zest,and a bit of juice,toasted pine nuts,olive oil and some red wine vinegar.Yum.Very very delicious.
