Cheese scone recipe please!

Can anyone help me with a good cheese scone recipe? I love cheese scones and was thinking of making them. My godmother used to make amazing ones many years ago, much better than in the shop.

Thanks! (was also hoping something DCs could help with?)

Ingredients

  • 225g/8oz self raising flour
  • pinch of salt
  • 55g/2oz butter
  • 25g/1oz mature cheddar cheese, grated
  • 150ml/5fl oz milk

Preparation method

  1. Heat the oven to 220C/425F/Gas 7. Lightly grease a baking sheet.
  2. Mix together the flour and salt and rub in the butter.
  3. Stir in the cheese and then the milk to get a soft dough.
  4. Turn on to a floured work surface and knead very lightly. Pat out to a round 2cm/¾in thick. Use a 5cm/2in cutter to stamp out rounds and place on the baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.
  5. Brush the tops of the scones with a little milk. Bake for 12-15 minutes until well risen and golden. Cool on a wire rack.

forgot to add sometimes I put some finely grated cheese on the top aswell.

Just serve with plenty of butter.
I'd probably put rather more cheese into my mixture than tots2ten and would always sprinkle more on the tops and then sprinkle a very small amount of cayenne pepper over the tops for extra flavour.
They are also good made as a Victoria scone shape - i.e. one or two large flatter scones, marked out into wedge shapes.

I dont measure out the cheese but know its more than the 1oz. Adding mustard powder to the dry mix gives a lovely flavour too.

Not made scones in ages, might do them this weekend.

Yes, mustard powder is vital as it really brings out the flavour of the cheese in the scone.
All this talk about lovely cheese scones means I shall have to cook some this weekend!

I put in paprika and mix the cheeses. I know it shoudl eb cayenne pepper but I never have any and always have paprika!
Sometimes I mix cheddar and red leicester (which makes it go pleasingly stripy) or if you only have cheapy mild cheddar then some parmesan adds a nice kick.

Would you put in mustard powder and cayenne? Could you make them with chili powder - DH loves anything spicy - or do you think they would be weird? (Obv would leave out for DCs!)

Mmm, chilli and cheese sounds yummy.
I am trying to figure out how to get some marmite on. I reckon brushed wilk butter on top or sometjing might work.
