What can I do with sausages and aubergines?

Need a recipe that combines the 2. Any suggestions will be happily tried out. I have most normal store cupboard ingredients if that helps.

I would make some sort of ratatouille (traditionally aubergines, courgettes and tomatoes, but I've been known to substitute any other available veggies!) and serve it up with grilled/fried sausages and some plain pasta.

I would oven roast the aubergine with whatever other veg you have and serve with pasta and the sausages

Chuck it in a pot (or slow cooker) with other veg, tomoatoes herbs etc... and make your own style sausage casserole

I would slice the aubergines and layer them in a roasting dish, season and drizzle with olive oil - its the Italian way and its delish. With this option, you could always layer in potatoes/tomatoes and cheese too. Serve with grilled sausages and a chunk of nice bread (well, if you're not on a diet!).

Thank you for all the incredibly yummy sounding recipes. Have a glut of sausages and aubergines that need using up so will probably try all of them over the next few days! Have also found some courgettes so the ratatouille idea will be tomorrow's dinner.

notnowbernard am going to roast the stuff today as that seems a nice easy option (just one dish to wash up!).

Why not chop the aubergines and sausages into chunks, marinade and then barbecue them on skewers? I do this with veggie sausages and it works quite well.

I also love making baba ghanoush when I have lots of aubergines - just grill them (over a naked flame if possible for a really smoky flavour), then scoop out the soft flesh from the inside and blend with garlic, lemon juice and olive oil - delicious. You could dip the sausages in it, maybe?
