Wheat free lunch box ideas

BobLoblaw · 15/06/2010 10:37

My ds has been struggling with loose stools and the Dr has suggested cutting down the amount of wheat he eats. Breakfast is easy enough and weekend lunches are fine but I'm struggling for ideas for his lunch box. He will eat a few cut up veges but not enough to fill him up and would be very grateful for a few ideas, TIA.

Sushi and onigiri and rice cakes?

BobLoblaw · 15/06/2010 22:16

I've given him rice cakes and oat cakes with cheese, chicken or ham. He will eat shop bought sushi but I was hoping for things slightly easier to throw together. Thanks you replying though.

Could you make rice salad, or couscous?

What about tattie scones? Admittedly better hot but they're quite tasty

tutu100 · 15/06/2010 22:22

Genius bread is expensive, but gluten free, and unlike other gluten free breads you can actually use it for sandwiches without having to warm it or toast it. Any it taste more like normal bread.

UptoapointLordCopper · 15/06/2010 22:26

Sushi and onigiri are easy to do. They are our fall back if we run out of things. Nori and rice and tinned tuna keep forever ...

ILoveDolly · 15/06/2010 22:31

You can these supercute shapers for sticky rice, which is what he might have in a lunch box if he were Japanese. They quickly press the rice balls into shapes. Perhaps a fun thing especially if this becomes a long-term issue.

BobLoblaw · 15/06/2010 22:42

Uptoapoint-Really? Can I be very cheeky and ask for a recipe?

tutu-Will lots of supermarkets have that? I don't think I've seen it in our nearest one doesn't but it is tiddly.

SoBloodyTired-Tattie scones? I will have a look at some rice salad recipes.

ILoveDolly-Sticky rice sounds cool, I'll have a looksie.

Thanks for all the ideas, I've been distinctly lacking in inspiration

This is a hard one!

Rice salad - I chop tomatoes, peppers, cucumber, add herbs and sweetcorn, dress with vinaigrette.

Potato salad as the carb with salad and cheese or ham chunks?

Do they allow flasks for soup?

Coucous is wheat so no good.

KnottyLocks · 15/06/2010 22:54

Quinoa (Keen-wah) is a good alternative to couscous and is really healthy. Mix chopped or roasted veg into it like you would for a couscous or rice salad.

Corn thins are a nice alternative to rice cakes, not very filling though. Good for snacking.

KnottyLocks · 15/06/2010 22:56

Would he eat Indian spiced food? You can make all sorts of things with gram flour.

KnottyLocks · 15/06/2010 22:59

And buckwheat flour can be made into pancakes and blinis. Despite it's name it's not wheat at all.

You can get gluten/wheat free wraps on line. My LO also eats cold cornflour yorkshire pudding with jam in for a change.

Gluten/wheat free Yorkshires : 90g cornflour, 4 eggs, milk to normal consistancy. Cook as normal - rise to high heaven and taste/look "normal"

BobLoblaw · 16/06/2010 08:59

KnottyLocks-He loves Indian food, where can you get gram flour?

MeltedMarsBar-I'm not sure about flasks, I will find out, he eats all sorts of soups.

TheButterflyEffect-Ooh he really likes falafel, my recipe uses extra flour but there must be hundreds of others.

notapizzaeater-I will have a look, thanks for the yorkshire pudding recipe, we're having roast on friday

Thank you all, I'm aware I sound a little silly having not thought of most of these things I went to school with a whitebread ketchup sandwich and crisps for most of the time and I had a look at an Annabel Karmel Lunchbox books and couldn't get past the funny novelty shapes etc, so thanks.

You can get Genius bread in Waitrose Sainsburys, Tesco and from Ocado. It is ussually with the gluten free foods, but in my local Waitrose it is with the normal bread.

UptoapointLordCopper · 16/06/2010 09:42

Bob - onigiri is easy, just cook rice (I use sushi rice for the stickiness), roll in little balls (with wet hands), and a piece of nori to wrap it so it can be picked up. You can have it plain to go with other things, or have fillings in them, though I haven't tried them. Sushi is slightly more involved but not much more - you need a mat, but other than that we always just use cucumber and tinned tuna for fillings. I learned it all from youtube! Let me see if I can find a link ...

UptoapointLordCopper · 16/06/2010 09:46

Something like this but wihtout the fussy bits like peeling the cucumber (FFS). There are plenty of guides, just find one you like!

wheat free pasta salad?

Check out the free from section in the supermarket, there is every type of bread product available inc. pittas and pizza bases. They are expensive though.

I like ryvita with mature cheddar and branston as a snack but not sure how that would go down with ds
