Easy and delicious pudding?

So I make a pudding for about 6 to 8 people once a week. So far I've made Eton Mess, tarte au citron, key lime pie and chocolate mousse.

Whatever I make needs to be fairly faff-free, cold rather than hot, not be too alcoholic, different from what I have done before and able to be cooked between my Tesco delivery arriving at 1pm latest and dinner time.

I always do a simple fruit salad as well so it can't be too much like that.

So what have you got?!

Bakewell tart 'in a bag'. You can find it on the bbc food website. It's from 'Economy Gastronomy' by Allegra McAvedy. I just made it today. It's amazingly easy and very yummy. Nice warm, but also good cold. Use bought shortcrust pastry, roll it out, plonk the filling in the middle and kind of scrunch up the edges of the pastry (rather than putting in a tart dish - hence the 'bag' in the name).

why not make a hot pudding (i know summer approaches) and reheat it, thinking any sort of crumble, served with clotted cream...

OK that's good to know about the tiramisu.

Pavlova would be good except that I would have to cook it tonight and I haven't enough eggs. And I intend to collapse in a heap once DC are in bed rather than cook.

Love the idea of lemon possett - and buying the shortbread!

DH loathes almonds so Bakewell tart not an option when he is here, but I love it so will keep it in mind for his absence. Don't really feel like making hot puddings in general but if I have to do this again in the winter I shall bear these suggestions in mind.

Collision: DH runs a 10 week course (a sort of Introduction to Christianity) in the evenings a couple of times a year and to make it more friendly and relaxed we hold at at our house and I make a pudding each week. People seem to bond better over sugar.

my easiest is apricot crumble (but hot).
-tinned apricots - so just open and drain
-crumble mix in food processor.

ooh I have a recipe

Cookie/mandarin orange thing

2 packets choc chip cookies
2 tins mandarins
whipping cream

Drain mandarins into bowl and keep juice

Dip each cookie into the juice and place round a quiche dish (making each cookie stand on it's side. You will end up with a squishy cookie but dont stand in juice for too long as it will really mush.

whip cream and with a palette knife put over the cookies. Decorate with mandarins and put other tin mandarins in the centre of quiche dish.

taffetacat - I cannot make cakes. People have been known to wet themselves with laughter at my attempts at anything sponge-like.

have noted apricot crumble for next winter and am trying to visualise cookie/mandarin thing, which sounds like exactly the sort of compiling rather than cooking thing I can manage.

i have a lemon curd iced thingy that you make in a loaf tin and slice

(I cannnot believe you can't make cakes by the way, especially if you're who i think you are!!).

ah yes, I have a white choc torte recipe too, technically not cheesecake just white choc and cream really

oh and delia's truffle torte - reg choc, cream and liquid glucose is super simple too and can be frozen.

LadyPeter - you must have had some duff recipes. Try a lemon drizzle cake, please! They are so easy. There's a recipe on here I think, an all in one cake. Cannot go wrong.

Or alternatively, my neighbour makes this Pampered Chef compilation choc bread and butter pud type thing which is yum and a real crowd pleaser.

What about buying (or making) a selection of ice creams, sauces, nuts and other accompaniments and letting people assemble their own sundaes? "twould be fun for your guests and no work for you...

madeira cake spread with jam,
cover with raspberries, drop of sherry,

My DH makes an ace banana tart. He just puts one layer of chopped bananas in a pastry case, and covers them with honey, then bakes. Tis yum, especially with creme fraiche, and very quick.

I really cannot make any cake reliably - scones, muffins, apple cakes style things, cupcakes, yes, but not 'proper' cakes. A friend has to make my kids' birthday cakes! One of these days I will have my three best cake-making friends over to watch what I am doing wrong but until then, I can't do anything that has to rise.

I can however do a baking tray of lemon drizzle cake, taffetacat. I'm reluctant to jinx my success at this by trying to make it in a cake-tin.

Choc croissant recipe bookmarked, and ice-cream sundaes now on list - there's still lots of weeks to go on the course, so trifle, pavlova, white choc torte all to come!

Offer grapes and cheese. Both are biblical. Added sugar is bad for us! (grin)
