Flapjack - please help!

Hello

I am ashamed to admit that I find Flapjack very hard to make - it either goes rock hard or too sweet and sticky (I like it quite dry). I have a fan oven which I have never mastered and have tried doing it 20 degrees less than the temperature, but it still goes wrong. Please can anyone help me with foolproof recipe suggestions or tips?

can you not just turn the fan part off?
or instead of tunring the heat down reduce the cooking time.

im a master of flapjacks but i don't follow a recipe, i just add stuff till it looks right.

you need to check it very frequently - anything with that much sugar/butter/syrup will go from just about done to burnt in about 3 seconds

i used delia smith recipe, it says cook for 45 minutes but i bung it in for only 10 15 mins at the most. when is starts to darked around the edges i get out then leave to harden.

is a very sweet recipe though but i love it like that and eat it all straight away.

Here... You can substitute honey for the syrup and change the amount of sugar. They are soft... Maybe add extra oats for a drier texture. .

I made these today with none of the sugar at all and they were fabulous
250g porridge oats (the cheap type, not large ones),
150g Butter,
2 generous table spoons Golden Syrup
half a tin condensed milk,
100g demerera sugar
baking tin, no bigger than about 18cm x 28cm

Method: 1. Preheat the oven to 160 degrees c

  1. Line the baking tin with baking parchment.
  2. Melt the butter in a large saucepan over a medium heat and add the sugar and syrup. Keep gently heating and stirring until all is melted and mixed. If it starts to boil take it off the heat!
  3. Add the condensed milk and mix. Bring to the boil for about a minute.
  4. Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
  5. Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
  6. Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooking.

Thanks all - I will give this a go. I can't turn off the fan - it's automatic. SoupDragon -do you reckon I should knock 20 degrees off your recipe?

I cook it at 160 in my fan oven.

I would definitely add more oats to make the texture drier although this may take some trial and error.
I had several goes before arriving at my recipe.

originally, the recipe was so sweet you could feel it stripping the enamel off your teeth. Even at 100g it was rather sweet which is why I left it out entirely this time. The children haven't noticed!

397, 405g or 1kg

Soupdragon I have just made the flapjack and for the first time ever have something that looks and tastes right! I followed your recipe, but put less condensed milk in - I don't know if I bought the right thing as it was quite yellow and thick (almost a bit custardy!) and it was very sweet so only put 4TBSPs in. I can taste it a fair bit so think I might omit it next time. Would you put any more butter or syrup in to compensate for no milk? Also, if I wanted to add raisins etc would I reduce the oats and if so, do you know how much? Thank you so much for your help! I am 9 weeks pg so I really wanted to get flapjack right as I need snacks to fill me up!
