does anybody know protein rich veggie recipes?

Hi all,
I'm vegetarian and seem to have a constant shortage of protein. Does anybody have any quick everyday recipes? Maybe a favourite tofu dish? Or any recipe books you could recommend? Thanks a lot

Beans beans beans! Yum. You MUST combine them with a grain such as rice or wheat in order to get the proper combination of amino acids to make a full protein complement.

Here is a favourite recipe: (Sorry about the US measurements. They're all relative anyways. )

Lentil Roast
Serves 6.

Ingredients
1 cup red lentils
2 cups vegetable stock
1 bay leaf
1 tbsp butter or margarine, softened
2 tbsp dried whole wheat breadcrumbs
2 cups grated sharp cheddar cheese
1 leek, finely chopped
4 1/2 oz mushrooms, finely chopped
1 1/2 cups fresh whole wheat breadcrumbs
2 tbsp chopped parsley
1 tbsp lemon juice
2 eggs, lightly beaten (I just cracked them right into the mix)
salt and pepper

  1. Put the lentils, stock and bay leaf in a saucepan. Bring to a boil, cover, and simmer gently for 15-20 minutes, until all the liquid is absorbed and the lentils have softened. Discard the bay leaf.
  1. Base-line a 2 lb 4 oz-loaf pan with baking parchment. (I didn't do that.) Grease with the butter or margarine and sprinkle with the dried breadcrumbs.
  1. Stir the cheese, leek, mushrooms, fresh breadcrumbs, and parsley into the lentils.
  1. Bind the mixture together with the lemon juice and eggs. Season with salt and pepper. Spoon into the prepared loaf pan and smooth the top.
  1. Bake in a preheated oven at 375F (about 180C) degrees for about 1 hour, until golden.
  1. Loosen the loaf with a metal spatula and turn onto a plate.
