How do I make home made fish fingers?

I want to make home made fish fingers with my oldest dd for tea but other thnan the fish cut into fingers, I am not sure what to do.

Do I flour, egg & breadcrumb the fingers then cook in the oven?

I had thought they'd be simple but got a bit stuck

I do flour, egg then crushed cornflakes (yes, you did read right - it's from an Annabel Karmel recipe, I think), and fry lightly in the pan.

I use breadcrumbs for mine, and do the same with chicken, but for the chicken I put a bit of finely grated parmesan in the breadcrumb mix. Crushed garlic is good too.

The whole point of fish fingers is that they aren't home made......!

Now, my home made chicken nuggets, courtesy of Nigella, are a different matter altogether!

I remember on masterchef they explained that you have to cut the fish in a particular direction so it doesn't fall apart.

But I can't remember which it was

I make similar chicken ones but add parmesan cheese to the breadcrumbs. Could work well with fish too.

Well, if they fall apart they fall apart fruitstick. We'll give them a go anyway and find out

seeker, it was more to get my dd involved in cooking tea than anything else & I figured fish fingers were quite simple.

Parmesan in breadcrumbs for chicken sounds tasty, will give it a go next time we have something along those lines.

Nigella's chicken nuggets are marinaded in buttermilk (yoghurt will do, the crumbed with crushed Ritz crackers. And they are seriously yummy. Tartare sauce, sweet chilli sauce or ketchup accordting to taste.

I think the chicken would be better to be honest as it's easier for little fingers to handle.

I used the mini fillets you can buy in the supermarket but you could just cut up a normal chicken breast.

DS loved making them but still refused to eat them

They are delicious though

oh, the fish is already defrosted now. Maybe she can supervise me if she does't get on very well with the fish. We'll see how we get along though

lucysmam, these chicken nuggets are good for getting the DCs involved with cooking - my DDs love shaking the bag with the chicken and pesto in it. And they all polish off the results......

Yum, thanks Poledra, will give them a whirl with my dd on Saturday when she comes home from nana's. She usually likes to bake something or make something with me while she chills out after a night away from home
