how do you make carbonara?

I don't like it,so have never made it, but it's DH favourite and I have some nice cubed bacon/pancetta.

Loads of double cream, parmesan and mushrooms so it doesn't taste to creamy bland.
Will try think of a recipe it's really very easy.

dont you use egg yolk too? or is that a fancy version?

beat eggs in a bowl and add salt, pepper and grated grano padana or pecorino (or parmesan, although I believe this is frowned upon by Romans )

put spaghetti on

saute the pancetta, add plenty of garlic

drain pasta, put in warmed bowl/return to hot pan, add pancetta mix and immediately add the egg mix

the heat from the pasta should cook the eggs just enough that you have a creamy sauce clinging to the spaghetti

lots of black pepper

Like Aquavit except I add a small splash of cream to the eggs. Totally not authentic but delicious.
It's one of DD's favourite meals and it's so quick and easy.
Delia has a fab risotto carbonara that we love too.

Aquavit has it correct! NO cream, mushrooms etc. The delight is in its silky simplicity. Oh, I add freshly chopped flat leaf parsley for colour and extra oomph.

Egg, bacon/pancetta, parmesan, and black pepper are all you need. Cream is nice. Mushrooms are not.

More egg yolk than egg white.

Do not put it back on the heat or your eggs will be scrambled.

like mugglewump, just with a large spash of cream. I also put about one tablespoon of oliveoil on top of each plate just before serving.

The egg ratio is important! For each person, use one whole egg and one egg yolk.

Find it goes cold quite quick so you might want to make sure you get bowls/plates nice and warm first.

i fry off bacon/pancetta add cream and parmesan and then stir in one egg yolk per person!
add to spaghetti.

I learnt this in Florence where they also make it without the cream. either is nice!

This is not a standard recipe. I saw it on the tv 13 years ago and have stuck with it.

Finely chop some onion and garlic and fry in a little olive oil in a deep frying pan.

Add chopped mushrooms and chopped bacon/pancetta.

Then add a medium sized tub of double cream and half a bottle of white wine.

Reduce to required consistancy (although I like it quite runny).

Pour over spaghetti.

Enjoy with the rest of the wine and have an early night.

Here's what I do:

Cook the pasta in unsalted water.

Fry lardons/pancetta/bacon bits or just chopped up bacon. Add single cream and heat up for a few minutes.

Separately, beat an egg and add enough parmesan cheese to make a stiff paste.

Drain the pasta and add the egg mixture, and let the heat from the pasta cook the egg for a minute. Add the bacon mixture and stir through. Taste and add butter or cream if it is too sticky. You can add salt at this stage, but will probably not need to due to salt in the bacon and cheese.

The whole thing takes about 10 minutes, so it is really fast food. The ingredients are the kind of things you can have on hand.

No cream like Aquavit. I use Nigella's recipe from How to Eat (think its the chapter on eating for one or two or fast food one)

Definitely no cream (as Aquavit).
If the cheese / yolk paste is too thick when you mix it with the pasta you can make it more saucy / creamy with some of the hot cooking water from the pasta.
