Peri Peri marinades . . . . . .

I'm having a BBQ on sunday and thinking of cheating and using the peri peri marinades for the meat.

Any one used them before? and are they best left over night?

Most marinades are best left overnight, on meat anyway (not fish). Are you trying the Nando's one?

I've not had much luck with peri peri marinades as the flavours don't seem to penetrate that well how do they do it at nandos?.

But I would advise leaving overnight and make sure you 'slash' the meat first.

If you use a dry rub kind of marinade mix it with some lemon juice first(the lemon really helps to tenderise the meat and helps the spices stick)

I use shwarz peri peri 'sizzle' herb mix, and make a paste with about 2 large tablespoons of spice mix,the zest and juice of one or two lemons, crushed garlic, sea salt and olive oil.
I put the paste underneath the loosened chicken skin of thighs and drumsticks, leave for an hour or so and then bbq
I sometimes do a whole chicken like this too, by spatch cocking it, loosening the skin and poking the mix between the flesh and skin, again leave for an hour or so to marinate.
It roasts really well
