Easy veggie weekday suppers?

We are veggie. I hate cooking.

I am so sick of pasta I could scream but am totally uninspired for easy weekday meals. I just draw a mental blank. I mean, what on earth can I possibly make that isn't pasta based?

I'd better come clean and admit that I really prefer fat laden, creamy, cheesy, pastry type veggie efforts rather than the worthy brown lentil type to be honest.

Any ideas? Would be v grateful.

I'm not veggie but eat vegetarian at least 3 or 4 times a week and we lovethis book for delicious food, fast to prepare, interesting and not worthy brown lentils. Quite a few recipes with cream / pastry / both in them! And even the ones which don't are really nice.

To whet your appetite, some of our favourite recipes (which take 30 mins or fewer) from this book are:

filled courgettes
sweet potato soup
butternut squash soup
scotch pancakes
warm cauliflower salad
easy cheese soufflees
various puff pastry tarts
mushroom and tofu stroganoff

See - no pasta!

I'm a Veggie who occasionally eats fish.

Sometimes I do egg fried rice with frozen individually bagged microwave veg - can't get much lazier than that!

For lunches I sometimes do linda McCartney veggie sausage in soft rolls - my ds (7) loves this.

We also like garlic and coriander nan bread liberally sprinkled with cheese and grilled.

Tofu in sweet and sour sauce served with rice is also a fav in my house. Sweet and sour sauce in my house is made with ketchup, sliced tomatoes and quartered onions.

I second cranks books. We have the bible and it's great.

Tbh i'm struggling as i love cooking so can't think of much that doesn't involve it. Like do you make cheese sauce? Cauli cheese...yum.

Or fry an onion and garlic with some chili powder, add a chopped pepper, and can of toms. Cook down a bit then stir in a can of beans or chick peas. Season etc. Serve with bread. Does that sound too much like hard work? Add cubes of fried halloumi, or veg sausages if you fancy. Try to be flexible and just stick in what you have that needs eating. Just try and bare in mind cooking time.

Keep some oven chips in the freezer so you can be free to experiment in the knowledge that you have a safety net. Also when you do cook make extra and freeze for a time you can't be bothered.

Ooh, this is easy... Baked spuds. When done cut in half and scoop out the middle, mash it up with any tasty fatty stuff (cheese, yog, boursan whatever) more cheese on top. Back in oven for five. Have with salad.

Could've written this OP myself earlier in the day!

As not v healthy veggies, we have:

veg sausage and mash
mush/cheese omelette + new pots and a veg
roast veg, tomato sauce and rice (more low maintenance than quick tbh)- with a bit of cheese for protein
egg and chips
fajitas from a kit made with quorn.

we do have a few healthy lentil curry type things as well now and again (trying to convince self diet isn't utter rubbish emoticon).

Med Veg Pasties

(You can make the veg at some point when you have the oven on anyway - it'll keep in the fridge for a couple of days, or freeze.)

Chop up loads of vaguely mediterranean veg - red onions, aubergines, squash, courgettes, peppers, tomatoes. Chuck in a few whole, peeled garlic cloves, douse with olive oil & balsamic vinegar & cook in the oven for an hour or so until softened & a bit blackened (give the tray a shake halfway through).

Defrost some ready rolled Jus-Rol puff pastry & cut each sheet into 4 rectangles. Put a dollop of veg on each (include cheese if liked), fold over, pinch edges together. Glaze with milk if you can be bothered!

15-20 minutes in a hot oven.

(Surplus veg mix can also be chucked into bought pasta sauce to liven it up a bit).

Cheese and potato pie - boil some chopped onions and mash a load of potatoes. Mix the onions into the potatoes with butter and loads of grated cheese then bake until it goes all golden and crispy. My dds adore this.

Asparagus and leek risotto (or butternut squash risotto).

Qaesadillas.

Big pan of rasted root vegetables with veggie sausages and cauliflower cheese - yum.

Baked potaotes - scoop out the potatoes and mix with butter, cheese and sauteed leeks, then pile back into the halved skins and bake until golden and crunchy.

Dauphinoisse with salad with a mustardy dressing.

And quesadillas...love them. I'm all about the dairy produce!

We love fried aubergine...soaks up lots of tastey olive oil...then add a spicy garlicy tom sauce and chuck mozz and parmesan on top and bake. Yum. Or layer aubergine and tom sauce with natural yoghurt and top with feta and bake. Yog bakes till it's all thick like cream cheese and the feta is crunchy and chewy. Delish! Have with loads of some bread. And maybe a vino or two!

Veggie chilli, with either quorn stuff or beans (I use kidneya nd pinto) and veg.

Tabbouleh (sp??)

Roasted veg with cous cous, could have veg sausges also.

Bean burgers and potato wedges

I like a veggie sausgae and bean casserole with rice.

Or rice baked in stock and veg in the oven.

Veg toad in th ehole.

Dahl, rice & spinach curry with loads of nice Pataks pickles - I know you said no 'worthy lentil-y things' but it is sooo easy & the pickles make it a bit special

Sosmix meatballs in tomato sauce with mashed potatoes

Colcannon flattened out into a frying pan & an egg each broken into dimples & cooked

Whatever-veg-we-have risotto (lettuce risotto is good)

Stirfried veg with sweet & sour sauce (Madjur Jaffrey has a good recipe) on noodles (I know its pasta but it doesn't seem the same

(hardboiled) Egg & potato curry (tomato-y) with rice, pataks lime pickle as above

(not veggy, but was for years & we rarely eat meat)
