I'm trying to lose weight at the moment and wondered whether I could make a fat free pastry. I want to make a quiche, but don't like crustless quiches. Can I make a shortcrust pastry using water of milk instead of butter?

Never heard of it and tbh can't see it working... Baking is a science and needs fairly precise formulae. Why not just have a small bit of quiche and a load of salad. Like i would... [liar emoticon ]

no
if you mix flour with water you get chapatti/roti, not pastry
and wgat woul you fill it with anyway? quiche needs eggs and creme fraiche/cream and cheese

WHy not use something like filo and only use a very few layers. Less quantity of pastry, so less calorific value, but still some structure to your dish.

Will be fragile, so would suggest making individual quiches.

Mrs Badger - I was going to fill it with smoked salmon, broccoli, eggs and milk. I've done this before with a normal pastry base and it was lovely.

I'll give filo a try
