Chicken marinade help

Having salad for tea, italian style leaves, balsamic dressing , goats cheese & pepper quiche.

Was going to grill flattened chicken breasts to have warmish, what marinade would you do?

I'd marinade them in garlic, chilli, ginger, lemon juice and bit of oil, then I'd do a breadcrumb kind of coating (and add some crushed cumin seeds to the breadcrumbs). Use an egg to bind the coating to the fillets.

That's what I'd do, but then I looooove curry/spicy things. I'm sure it would go with the rest of your dinner?

Or if you wanted to steer clear of spices etc you could do a lemon juice and thyme marinade, with or without garlic. This is delicious

Maybe match the balsamic in the salad with a balsamic, honey and wholegrain mustard dressing.

My alternative would be to have harissa chicken as a contrast.

COT I'm going to go with your first marinade but no breadcrumbs cos I'm a lazy besom.

I do a mean Chicken Parmigiana but only on a weekend.

ooh whoops i forgot to include the garam masala. a small teaspoon max, depending on how many beasts you're cooking.
