Barbeque Food

Having just bought a new barbeque I'm looking for recipes.

So far we have used it to cook sausages (very nice, served in a honey and mustard dressing) but I'd like some other ideas.

Oh. You absolutely MUST buy this book. It has fabbo recipes in it for anything you might want to BBQ. Fantastic grilled pepper salad, thai beef salad recipes and loads more and they all come out tasting professional, delicious and so damn tasty.

Marinades are the way to go - overnight the night before pref. Have a really good one involving yoghurt I can post if you like.

Whole fish also great done for special occasions.

And I have something of a souvlaki fetish atm. Marinaded pork or lamb cubes, bbq'd then chilli, red onion and yoghurt in a pitta. mmmmmm......

Please share your yoghurt marinade - that sounds lovely.

Thank you for the book recommendation - I shall order it.

Marinade for chicken or turkey kebabs
Chicken or turkey diced into cubes
natural yogurt large pot
garlic crushed (as much or least as you like)
turmeric .5 teaspoon
ground coriander (spice) .5 teaspoon
ground cumin 1/4 of teaspoon
lemon juice half a lemon

leave overnight then thread on to skewers
delicious!

Once you've made it you can adjust spices to suit your taste.

Or just mix the yoghurt with a couple of tbsps of your fav curry paste (I like Pataks Tikka Massala) and a squeeze of lemon juice. I have only tried it with chicken but it is always lovely and tender

When is the BBQ party then???

aJumpedUpPantryBoy · 31/05/2010 23:20

I love the idea of a BBQ party - of course, I'll have to do lots of practice runs first

Your recipes sound lovely - although me buying a BBQ may herald the beginning of the monsoon season.

Venison steaks marinaded in Olive Oil with Tarragon, Garlic and Salt. Flash grilled, heaven!

taffetacat · 01/06/2010 21:08

Yoghurt marinade

enough for 6 steaks ( lamb or beef ) or chicken breasts

150ml greek yoghurt
1 large bunch fresh herbs of choice finely chopped ( dependent on meat )
2 tsp salt
6 crushed cloves garlic
1 bunch spring onions finely chopped
1 small green chilli finely chopped

Mix ingreds then coat each piece of meat well. Put into a freezer bag or shallow bowl and fridge for at least 3 hours pref overnight. Bring to room temp before cooking.

I hear the weather gets better tomorrow.....

We have done a massive slab of rump steak recently, marinaded in olive oil, rosemary and garlic. Lots of salt and pepper just before going on the barbie, grilled fiercely for a couple of minutes max on each side (ie good and rare), rested for a few minutes and then sliced up into thinnish strips (like Italian tagliata). It is delicious and cutting it up like this makes the meat go a long way - one big steak has done 6 and 8 people for us, with lots of delicious bread and salad. (OK, and some burgers, but we are greedy buggers...!)

this also reminds me that chives are brilliant in homemade burgers, much better than onions I think

taffetacat - I used your marinade and it was delicious. Thank you.

aquavit - that sounds mouthwateringly good. I can see us trying it very soon.
