Cakes that freeze well

Can anyone suggest cakes that taste and look fine after being frozen?
I have to take cakes to a school fundraiser but only get back from holiday the night before, so will have no time to make or even decorate cakes. I need something I can make this week (10 days ahead of the event) and stick in the freezer.

Anything with nuts in eg orange and almond cake, pistachio cake etc. The recipe I have for the ornage and almond cake is brilliant - its an all in one food processor one that is ridiculously quick. You can tart it up once its defrosted by seiving icing sugar over and adding some strips of ornage zest to the centre.

I have made this Delia coffee walnut cake and frozen it sliced several times and it is as light and yummy defrosted as it is fresh. Including the frosting.

Might be easier to freeze the sponges and just ice it when defrosted though, depending on what you intend to freeze it in and how roomy your freezer is really.

The frosting/filling is very easy to make btw.

I don't even like coffee or walnuts but I love this cake!

ps the recipe calls for espresso powder but I always just use normal instant.

what kind of cookies would you do? would you freeze them cooked or uncooked?

I froze a lot of iced cupcakes I had left over and they came out fine.. The (white glace) icing was a thick blob with a chocolate button on the top (sort of like a fried egg).

pootles - freeze cookie dough uncooked. Most cookie dough freezes really well. Lots of people I know make a batch of dough, cook say 6 or so, then divide dough into 2 and freeze in 2 bags so they can do another 6 when the mood takes them.

fab thanks will do. expecting our first in 6 weeks, and normally when people visit i like to offer them biscuits etc, obviously won't be up to that with newborn! so i thought i could freeze them ready cut out on trays iyswim, then just bung them in when people arrive!

You can freeze the cookies baked as well, they will defrost perfectly fine.
