I have strawberries, raspberries and blueberries....

What can I make?

I've got half a punnet of strawberries and raspberries and a full one of blueberries. I don't want to waste them, but am at a bit of a loss now. I thought about a Sunday teatime treat and have a well stocked baking cupboard, but no ideas!

Any recipes/suggestions for a family of 5 would be greatly appreciated.

Thanks.

Pavlova? never had one with blueberries but think it would work.

liath · 30/05/2010 08:42

Pavlova or Eton mess

Summer pudding

Put them on a baking tray and lightly freeze them. Melt white chocolate and add double cream to make a hot sauce to pour over the frozen berries. Deeelish.

You could make a mixed fruit crannachan - usually made with rasps and whisky but you can be inventive I'm sure! To be honest we usually just have soft fruit with Greek yogurt or creme fraiche, it's too lovely to have any other way!

Eton mess is brilliantly easy: berries, whipped double cream (or yoghurt, but double cream is way yummier!) and crumble in some meringue nests. Heaven! Don't make too far in advance though as the meringue dissolves!

I like to make a sorbet, as my girls adore ice cream and I can control what they have in it.
Blitz a load of the fruit ( as much as you want) Then make a sugar syrup with a little castor sugar and water, heat till sugar dissolved, allow to cool. Blitz syrup and fruit, then pour into shallow tray/box, freeze till nearly set, blitz again, freeze again. Repeat at least once then allow to freeze properly. Get out of freezer about 10 mins before you want to eat to let it soften slightly. My girls love it, if you don't use all the fruit to make this, you could serve it with some of the whole fruit.
Measurements along lines of 125g castor sugar to 125ml water. 400g fruit. But you can vary it to suit self.

Wow, some excellent ideas, we have had it with yoghurt all week as I went a bit mad because it was on offer! I thought using it up today as a treat would be nice. I think I will make Eton mess today. I should have thought of that shouldn't I? Doh.

I will try the sorbet and frozen berries when my freezer has a bit more room, it's currently full of our pig and lamb.

Thanks for taking the time to reply.

Ahhhh, the easiest and tres' elegant treat that everyone loves[licks lips]:
halve the strawberries, pop all in a pretty glass bowl, add about a cup of Grand marnier and leave in the fridge for couple of hours.
Serve in chilled martini glasses with a mint sprig.

Smoothies or even better make smoothies and freeze the mixture into lolli molds. Nice and refreshing if the sun ever comes back out again.

You can also make crepes for breakfast with a fruit compote. Cook down your fruit with a litlle bit of sugar and a squeeze of lemon. Top with whipped cream. MMmmmmm One of our favorite breakfast treats.

Fantastic, Rollmops.

yy, Eton mess - buy ready made meringue nests and double cream/ice cream, smash the meringues up and mix it all together - yum yum!

Or - I have before now whizzed them all in the blender (especially if they're not in top condition), whipped the double cream almost solid and then carefully mixed the two - very rich creamy pudding but rather yum.

catinthehat2 · 30/05/2010 14:39

Would you mind if I had a bit of the Eton Mess along with some of that Grand MArnier mixup.

Looks delicious.

Thanks

catinthehat2 · 30/05/2010 14:41

Oh dear, from your title I thought you were offering me pudding.

ILoveGregoryHouse · 30/05/2010 14:41

Pavlova or Eton Mess and you could try mixing the cream with coconut yoghurt. It's lovely.

pantaloons · 30/05/2010 19:32

Looks like it will have to wait until tomorrow as we accidentally went to the pub for tea!

Might end up as pancake topping and smoothies now.

Cheers.

That's also fine by me, may I have a small helping of both?

pantaloons · 30/05/2010 19:56

No problem, I will pop some in the post on Tuesday!

Accidentally went to the pub - I like.

I'd go pancake topping with the blueberries, save the strawbs and use the raspberries for a raspberry and almond madeira cake recipe I have. Tis to die for. Can post if you're interested.

catinthehat2 · 31/05/2010 09:38

Yes , do post me anything berry related, I will be sitting patiently by the letterbox on Wed morning with my mouth open.

BrownPaperandString · 31/05/2010 21:02

Bake them all mixed up together with crumble on the top

BrownPaperandString · 31/05/2010 21:03

or look on the ocado website for the recipe for berries with a citrus syrup -YUMMY!!

BrownPaperandString · 31/05/2010 21:06

or make strawberry yoghurt ice-cream.
[http://www.icecream-recipes.com/icecream_recipe/strawberry_yogurt_ice.htm here is a recipe]] but do use half natural yoghurt and half double cream./ You don't need an ice-cream maker. Take it out of the freezer before it's fully frozen for optimal deliciousness or remove it giving it time to soften before serving. You'll know when you;'ve got the mix right because you'll want to eat it straight from the container without putting it in the freezer at all

BrownPaperandString · 31/05/2010 21:06

oops recipe

Isaidheyhoney · 01/06/2010 00:48

Really, BPS, would you bake strawberries in a crumble? Have never heard of that, but v happy to take it on board.
