Nice lentil curry recipe?

My kids seem to like lentil curry when they get it in nursery so would like a recipe to make for them at home. Anyone have a nice simple one?

Delia's Lentil Dhal is lovely and easy.

My DS loves it too - you can make it as spicy (or not) as you like.

Chop very small or whizz up in food processor onion, garlic, carrot, celery, and any other veg you have lying around. Sliced mushrooms and red pepper strips are also nice. Spoon around three tablespoons of a curry paste of your choice into a big pan, heat up and add all the veg. Fry gently until soft, then add several handfuls of red lentils (as many as you want), stir, then add a tin of chopped tomatoes and enough vegetable stock to cover. Add a handful of raisins, then simmer for about 20 - 30 mins until lentils and veg are cooked. Add a load of spinach, roughly chopped, stir in and serve immediately with basmati rice.

if you want to make a more "authentic" one then:

Boil some red lentils in a pot with water to cover 2cm over them. Add some turmeric and chili powder to taste and a pinch of cumin seeds and a chicken stock cube.
Simmer when boiled on low heat until the lentils are soft and mushy and the consistency is slightly thick but not gloopy.
Meanwhile in a frying pan melt some butter and add a few cloves crushed garlic, then some peeled and chopped tomatos (about 2 medium sized ones). Fry until tomatoes dry and roasted.
Add a little garam masala if you have it.
Finally add the buttery "tarka" to the lentils and mix through. Stir through some chopped coriander.

this natco recipe is the version I use most.

Try with different types of lentils - I like the bigger ones eg green or brown whole ones best.

The asafoetida is essential
