I cook a proper lunch for myself and DD, but need something quick and easy to give her for dinner, any ideas?

I do the opposite, and have a cooked supper, but for lunch we usually have either cold stuff like ham, cheese, cucumber etc, or we have soup (with cheese and croutons if I'm feeling fancy), or do a "dippy" lunch - carrots/breadsticks/pepper with humous, cheap philadelphia and whatever else they can dip into. Poached eggs on toast go down a treat too. Have to admit to doing sticky rice, frankfurters and sweetcorn when in a rush - sounds yukky but is yum, if not the healthiest of foods.

Same as BubbaAndBump, we have cooked supper, but for lunch it's mostly cold or very simple so could be tuna wraps, scrambled egg on toast, ham sandwich, cold sausages left over from night before, quiche, sausage rolls - generally whatever I'm having too.

She's not too keen on many salad vegetables but is happy to munch on red peppers, cucumbers and beetroot so she often has those on the side.

Then yoghurt, jelly or fruit.

What time does your 2 yr old go to sleep secondcoming?

Rollmops · 26/05/2010 18:34

Eggs Florentine with tons of spinach is one of the favourites, homemade pate on bread, couscous salad with tuna and vegetables, carrot, tomato or butternut soups, cheese omelet, sweet potato mash with beef or lamb stew, chicken and mushrooms with pasta, etc. Breakfast is usually weetabix or porridge with organic blacstrap molasses or toast and marmite and fruit.
Lunch eggs as above or greek yogurt with pumpkin and sunflower seeds or cheese, raisins and oatcakes...
Dinner is usually what we eat.

We do the opposite too, so have a lighter meal at lunchtime. Usually sandwiches/wraps/pitas with salad bits on the side. Then at supper time they normally have leftovers of what we had the night before. If DH and I ate something "unsuitable" or too expensive (e.g. monkfish curry) then I normally give my DTs something like stir fry with noodles and prawns, or scrambled eggs/beans on toast, followed by yogurt and fruit.

thanks, loads of great ideas. I've only being doing a cooked luch since xp and I split, and I'll usually have a baked potato or salad once DC in bed. I always find it harder to cook imaginative things when the weather warms up, and once I've cooked lunch I can't be bothered don't have time to cook another meal for DD.

secondcoming ~ lucky you @ sleep in the afternoon and waking time! My DDs wake at ungodly hours and only one (19m) has a sleep in the afternoon - so I'm knackered by their bedtime (7:30ish). Trying to weigh the advantages of late waking or late staying up at night - not sure . Can we not get children who go to bed at 7pm and sleep through till 8 am with a couple of hrs' kip in the day too? Sorry, hi-jack of post! :S

I take it you don't feed yours frankfurters then Rollmops ? Your menu reads like a perfect mum's menu. Makes me at mine - although healthy-ish, nowhere near yours!

grapesandmoregrapes · 26/05/2010 19:01

Bubba - my DD gats up horrifically early too, and goes to bed at 6.30, but I would rather have the evenings to myself than a lie in, otherwise I get bugger all time to myself!

How long have you got left to go secondcoming?

Don't know why I'm even considering doing clever things with my girls' sleep as am also up the duff with #3, so it'll all go screwy then again too!

ikwym grapes - I think the evening's better for us as we have to get up fairly early for work etc anyway - still, am hoping #3 is going to follow my rule book a bit better

Oh I wish! Most of the stuff is really quick, i.e. eggs Florentine is heaven sent as it takes 3 min and they love it, same with the rest of the stuff. Pate is always a good standby as Rollmops' clan has a fab family recipe and we make it monthly in gargantuan amounts , takes 30sec to spread on the bread....
(I keep frankfurters for moi, thank you very much, my junk food craving that makes DH go )
I am a bit fanatical about blacstrap molasses and Marmite as folic acid and iron are so important for the children and this's easy way to make sure they get their fair share.
