Tofu??

Has any one got any ideas for tofu?? I am trying to cut down our meat and dairy intake and grabbed some tofu from the super market with a vague idea of doing a curry. Is it best to marinade it first?

It's definately better to marinade! It's very bland on it's own but does take up flavours nicely.
I usually freeze it then defrost it for use in currys as it then doesn't crumble up so much. Once defrosted, squeeze it gently till water stops coming out. Then cube up and marinade, in some curry paste for a curry. or for a stir fry I marinade in soysauce, garlic, ginger, chilli etc.

I prefer it in stir fries. We had tofu burgers last night - a variation on Annabel Karmel's rissoles. Yummy with rice salad. The pre-marinated stuff is nice, but quite salty and expensive.

Off the top of my head ... saute some finely chopped spring onion, with garlic and a bit of ginger. Add grated carrot and grated courgette and saute a bit longer. (Remember to squeeze excess juice out of grated veggies). Finely chop some tofu and add to the mix. Add a tablespoon of soy sauce and a tablespoon of honey and mix it all together. Add breadcrumbs a spoonful at a time until the mixture binds well together. Form it into burgers of whatever size you want and coat in flour before frying for a few minutes. You can eat tofu raw so you only need to crisp them up a bit and warm them through. The original recipe has mushrooms and cashew pieces in too, but DH calls mushrooms 'slugs' and I can't eat nuts. I don't add any seasoning cos I make them for DD to eat too, but I'm sure they'd be nicer with some salt and pepper.

I get fresh and then stick in the freezer :-) Nope not veggie but like to eat free range only so eating veggie half the time cuts the costs a bit.
