Suggestions for a meal for vege/dairy/nut allergy guests please?

I am having a group of friends round for supper soon and am struggling to come up with a simple menu to fit all the dietary requirements....i.e. some are veggie (and possibly don't eat fish), one can't eat dairy and a couple have nut allergies.

I really want to do something quite straightforward as I don't have a lot of time to prepare it, and I want it to be an informal evening, not something showoffy. Was thinking a big lasagne and salad but obv can't with the dairy. Also thinking Keralan fish curry and mango salad but not sure about fish and some people might not like curry.

Does anyone have any suggestions please? TIA

I would have thought any vegetarian meal will be fine. Just make sure that all butter etc is replaced with oil and DONT put any nuts in it

Roasted butternut squash with a really yummy risotto plus optional Parmesan for sprinkling on after.

Can the non-dairy person eat soya? If so, you could still do a lasagne, making the white sauce with soya milk and dairy free cheese (I would recommend Cheezly).

It's also possible to make very tasty dairy free garlic bread if you wanted to do that as another accompaniment (we use Pure sunflower spread, usually mixed with a little olive oil). I think some french sticks have milk or whey in them but many don't.

As fascicle has said just make the bechamel with Pure spread and non-dairy milk. Don't use rice milk as it is really sweet, if you use soya make sure it is unsweetened. My personal preference for making bechamel is Oatly.

The non-dairy free guests could sprinkle some cheese over their own portion of lasagne.

those part baked baguettes are normally dairy free and good for making garlic bread with Pure spread.

Tagine sounds like the kind of thing I'm after as I don't really like adapting recipes using oat milk, etc. Had to do it for ages for my DD and TBH it never tasted as good as the real thing, but that's just my opinion - maybe I'm just not doing it right!

Risotto is a good idea but would have to be in the kitchen stirring whilst guests arrive....

HoochieMommaLurve - do you have any tried and tested veggie tagine recipes? If not, don't worry, I'll just check out BBC good Food.
