Can I make and freeze guacamole? What about salsa?

I imagine salsa would be ok, but IME avocado doesn't freeze at all well. I've never tried freezing guacamole though.

I wonder if I could make everything but the avocado and freeze that, then mix that into the avo on the day?

I am doing Mexican for 30+ people and trying to make it as easy as poss on the day.

I can't remember all the ingredients, but as far as I know they are all freezeable except for the avocado.

You probably already know this but if you allow your avocados to ripen they will then keep in the fridge for up to a week so long as you haven't cut them open. Also if you need to ripen them quickly put them next to some bananas.

Now, how shall I organise my avocados... by size? By country of origin?

Sorry but I wouldn't freeze the guacamole, salsa, or any of the ingredients. The whole point is for these accompaniments to be fresh and zingy.

My tip for guacamole is to include some dried smoked chillies (chipotles) as well as the fresh ones, and make sure your limes are ripe, ie yellow not emerald green. I know this is easier said than done if you are shopping in a supermarket - but try an Indian grocer and you might have more luck. Lastly, mash with a fork not in a processor to retain some lumps of avocado, or you'll get gloop.

Can you rope in someone to sous-chef for you?

Fwiw i used to work at a restaurant that bought in frozen guac. It was fine when defrosted though i don't know if it had anything in it to help it retain it's colour or was frozen in a special industrial way or something. Maybe you could make and freeze a batch as an experiment? Have to say personally i would make on the day. Esp as your chilli or fajita stuff will benefit from being made or marinaded the day befor so will just need chucking in a pan. -

i wouldn't freeze either one.

the salsa would go way watery upon defrosting.

and fresh guac i don't think will freeze/thaw well.
