Key lime pie - but not too sweet

I'm looking for a really lime-y and not too sweet Key lime pie recipe. I had the M&S version tonight, and although it was quite tasty, it was a bit bland. I'm looking for the lime version of a good lemon tart, IYSWIM.

I use ginger biscuit base ( crumbed and mixed with melted butter )
Then:-
tin of condenced milk
5 fl oz of double cream
Juice and zest of 2 limes
All whisked together until it starts to thicken. Pour into biscuit base. Chill overnight.

That sounds nice, but is it very sweet? Is condensed milk the very thick milk, or is it Carnation milk? I can never remember what's condensed and what's evaporated.

I use this one, but with a standard tin of sweetened condensed milk and normal limes that I get here.

I make the base with about 10 crushed digestive biscuits combined with 85g melted butter.

Carnation is usually evaporated milk - condensed milk is the really thick sweetened stuff. I don't know if you can get it unsweetened. Wouldn't it need to have a fair amount of sweetness to counteract the limes though? Even though you want the lime zing to come through - I have overused limes (by accident) before and the sharpness produced instant mouth-shrivelling.

Hope it works out for you - I am going to be trying the pecan pie expat recommended this afternoon!

Thanks for all your help, everyone. I've saved this thread, and next time I'm in a pudding mood, I'm going to try it with Trumpton's bottom and Expat's top.
