Has anybody please got tried and tested recipes for -

a lentil or nut loaf that doesn't have mushrooms or tinned tomatoes in it?

  • lentil rissole/pattie type things, ditto?
  • a superlative vegetable curry?
  • anything good and veggie using butternut squash?

My tried and tested nut loaf has mushrooms in, but I imagine it can easily do without...

slowly cook 1 onion, 1 leek, 2 celery sticks (replace mushrooms maybe with more leek, or even carrot); add tin of lentils (drained), 150 g chopped mixed nuts, 1/2 cup of flour, 1/2 cup of grated cheese and 1 beaten egg. Season to your taste and bake 50 mins at 190 C

Yup, grease and dust with a bit of flour to prevent sticking

You could probably leave out the nuts and make them into patties too... I think the cheese makes it a little different

fair point, whoops

it is very tasty - the balsamic and the cheese add depth. I haven't eaten a whole dish of it without the ham but had a few mouthfuls without and was yum.

That salad looks nice - think I'll try it, but replace ham with halloumi cut into little bits, quickly fried up - should give a nice salty kick too

Butternut squash risotto is good.

Chop your squash into square inch pieces. Chop a red onion into big-ish chunks too (one per two people you are cooking for). Roast in the oven with salt, pepper, olive oil (and sage if you have it) for 30-45 mins.

Make your risotto; add the roast squash when it's soft in the middle but nicely crispy on the outside.

Yum (but even nicer if you roast some chorizo with the squash!)

Not lentils, but I have an easy recipe for patty type things. Basically half oats and half beans (the original recipe was kidney beans). Then add whatever you want...

I normally do onions, garlic, coriander, and some mashed sweet potato for a bit of moisture as it can be a bit dry. Recipe says to fry, I do a minute on each side (if anything!) then stick them in the oven.

Really versatile as a basic formula, and you can add whatever you want for different flavours.

Not sure if you're in the market for something sweet but if you are, I have a nice recipe for muffins that uses butternut squash/sweet potato or pumpkin.

Redhappy - they sound good. have you got a recipe? DD1 won't eat kidney beans though so do you think another kind would work?

Knotty - yes please to the muffin recipe as dd2 loves baking, so would enjoy those I'm sure.

Here's the original recipe, and I've substituted kidney beans for whatever I have in the cupboard in the past and it worked fine....

2 1/2 cups/1 pound/455g or 2 cans cooked drained kidney beans
1/2 cup/2 oz/55g rolled oats
2 tablespoons soy sauce
2 tablespoons vegetable oil

Drain and mash the beans in a bowl ( I had to use hand blender for this it's hard going!!). Add the oats and soy sauce and knead well with the hands.
Form into four large burgers.
Saute them in the oil on each side, starting out with a high heat to brown, then lowering the heat so that they are cooked right through.

The first time I made them I used sooo much oil frying them, they really drank it up. I have ended up doing them in the oven instead. I make up my own now to. As long as you have roughly half and half of oats and whatever beans you are using, then add anything else you want, seems pretty foolproof.

Pumpkin muffins:

115g butter or marg
175g brown sugar
115g golden syrup
225g pumpkin/squash/sweet potato cooked and mashed
2 beaten eggs
200g plain flour
pinch salt
1tsp bicarbonate of soda
1 1/2 tsp ground cinnamon
1 tsp nutmeg
50g currants or raisins

Preheat oven to 200C.

Cream butter until soft. Add sugar and syrup, beat until fluffy.
Mix in eggs and pumpkin.
Sift in flour, salt, bicarb, cinnamon and nutmeg. Fold into mixture.
Stir in currants/raisins.
Spoon into muffin cases - 2 thirds full.
Bake for 12-15mins.
