Bara brith - does anyone have a good recipe?

We're just back from a week in Wales where I have developed an addiction for bara brith (with lots of salty butter nom nom nom).

Can anyone recommend a recipe for it please?

from Just Like Mother Used to Make by Tom Norrington Davies

Bara Brith

for 20.5cm/8in loaf tin
butter for greasing
300g self r flour
300g mixed dried fruit
100g golden caster sugar, or soft brown sugar
1 tablespoon mixed spice
pinch salt
1 large egg
100ml milk
2 tablespoons treacle or golden syrup

Preheat oven to 180C/Gas 4. Grease and line loaf tin. Mix flour, fruit, sugar and spice and salt in a bowl. Make a well in the middle and drop in the egg. Heat the milk until just warm and stir in treacle or syrup until amalgamated. Treacle may curdle the milk slightly, but tis not a prob.
Pour milk into the well in the flour and beat with a wooden spoon until you have a stiff dough.
Pour the mixture into tin and bake for about 1 and a half hours. Let the cake go completely cold before turning out. Matures well in airtight box for a few days.

I use this one but its definitely not a last minute job
1lb sr flour
1lb mixed dried fruit
2 tbsp marmalade (if you have it)
1 egg
6tbsp sugar
1/2 pint warm tea (no milk)
1 tsp mixed spice

-mix the sugar fruit and water together and leave for at least a couple of hours
-stir in flour, spice, marmalade and the egg (beaten)
cook for about 1hr 45 at 160ish

Its the recipe my mum uses and though mine is lovely its never as good as hers

16oz mixed dried fruit
4oz demerera sugar
5floz hot tea
1 egg
8oz SR Flour
1tsp mixed spice

Start the night before by mixing the tea and sugar together, and soaking the fruits in it.

The next day stir the egg into the fruits, then sieve in the flour and spices. Mix well and pour into a 1lb loaf tin. Bake for 1-1.5hrs at 170.

I realise this is a very old thread but if you want more recipes @saltyseadog this is my adaptation of the one @bronze posted (for which many thanks!):

450g mixed dried fruit (but I always include some dried cherries)
400g SR flour
300ml of tea (I use a chai mix)
2tbsp brown sugar
1 orange (juice and peel)
2tbsp marmalade
1 egg
2tsp mixed spice
1tsp ground ginger
1tsp cinnamon

  1. Mix tea, sugar, dried fruit and peel together - cover and leave overnight then:
  2. Mix egg, orange juice, marmalade and spices together and mix into the fruit/tea mix
  3. Fold in the flour the pour into a loaf tin (mixture shouldn’t be ‘runny’ but not dry either!
  4. Put into 160 oven (fan assisted) for about 1 and a half hours

Enjoy with Welsh salty butty
