any ideas for light/easy lunch for 15?

I don't want anything too heavy as we're going out for dinner in the evening. also want as little hassle as possible. most of my low-hassle stand-bys are casseroles - which tend to be a bit heavy for a light lunch. so a bit stuck for ideas...

plates of ready made rocket & baby leaf salad, topped with layers of sliced mozzarella and beef tomatoes, topped with loads of shredded basil, drizzled in olive oil. Serve with baskets of ciabatta and balsamic on the side. if you want more then plates of italian meats as well.

salads, cheeses e.g. brie, dips like houmous, tzatziki, pitta bread, falafels. All easy and light

has to be said we have quite a lot of lazy dips and cheese and salad etc type lunches and I love them. but this time we're going out in the afternoon and it might be best to have something where you eat a portion and then you're ready to go iyswim. cheese etc is an expandable feast that can take hours to eat (normally great) - so I'm trying to think of something else.

Or huge bowl of cous cous, tagine, salad.

Or soup, bread, cheese, figs, grapes.

thanks all. found a really nice recipe in my Joanne Harris book - it's slightly odd tbh. it's kind of like a blue cheese bread and butter pudding. I'll do it with a green salad. apparently called soupe de fromage in France. but it's not a soup

I know you have decided now, but for future reference Nick Nairn's Orange & Coriander Marinaded salmon is delicious 4th recipe down on this page

Either served with crusty bread and rocket salad or over cous cous. It can all be done 12hrs in advance too. Oh and i steam the salmon rather than fry and is better IMVHO
