Suggestions for low GI vegetarian recipes please

Although I do eat dairy I try to limit how much. Dp is the vegetarian (although he is inconsistent in this, and I think he would probably eat fish at the mooment), so I'm trying to think of meals we can eat together- we eat everything else except mushrooms and raw celery!

Something like thai curry?

I make it with butternut squash and other veg - usually brocolli, courgettes, carrots, and you can bulk it out with chickpeas (good for protein and lowering the overall GI score).

What I do is: parboil butternut squash (not essential, but speeds up process).
Dry roast (so in hot pan), about 1/4 each of cumin and coriander seeds. Set aside when they start smelling. Then, fry onion, minced garlic, chilli and ginger in oil (usually sesame) until the onion is clear (for amounts, I would say 1/2 onion per person, then garlic etc. to taste). Then, add in rest of chopped veg and cumin and coriander seeds, stir fry until partially cooked. Pour in a can of coconut milk (can be half/half with stock to be less fatty) and then leave to cook down. Serve with naan breads or wild rice and chutney. Add salt and pepper as required.

You can also do baked potatoes, leaving off butter, and having with baked beans or tuna (this lowers the GI score of the baked potato), with salad.

Oven roasted or poached salmon with wild rice and vegetables.
A giant salad with various vegetables, with say edamame beans, green peas, tuna, sweetcorn, cucumber etc., with french dressing.

I'd totally forgotten about wild rice, we used to eat that all that time.

Coconut itself is low GI, not sure about coconut milk.

Tomato and coconut dahl

Fry finely chopped onions and garlic in oil or ghee
Stir in some medium curry paste (about 2tbs) or your own mix of cround spices and fry that a bit
Add enough red split lentils to serve 4 (about 2-300g) and stir around to get nice and hot

Add a can of chopped tomatoes and a can of coconut milk (or half a block of solid coconut cream)

add enough water to cover the lentils in a soupy manner

leave to simmer for 30 mins and stir it often, adding more water when necessary

Season to taste at the end (adding salt too early toughens the lentils)

Serve with rice and/or chappatis - which are wholegrain.

Try the cranks cook book. It's veggy and healthy with very little cheese. It's one of the few books i actually follow recipies from.
In particular i'm thinkin of farrinata. It's like a big thick pan cake made from gram (chickpea) flour. I know chickpeas are low gi so imagine the flour would be... You can mix the batter up in the morning or night before then chuck veg and stuff in it (we often use a jar of peppers if stuck) and have it with salad and a bean and tomato stew or somesuch. It's great cold for packed lunches.
There's loads of other great stuff mostly based around veg which is all pretty low gi right? Not too up on it.
How about rissoto but made with pearl barley instead of rice. We have this alot as it's really cheap and good for you. Pea and mint is our store cupboard stand by... Just raid freezer and pot in garden! I think barley is low gi...

oh I've seen that cjickpea cake before, sounds delicious! I never got round to making it, but will give it a try soon now...

We eat a lot of risottos already, I do them with quinoa a lot at the moment. I need to get a definitive list of low GI foods really to see where I can just make small adjustments to what we're already eating.
