Quiche Recipe Please!

I want to make a quiche as we all love them but I am fed up with buying them when I assume they are quite simple to make.

I have done a search on here and there are lots of threads about quiche but no actual recipes!

So anyone got a tried and tested favourite they'd like to share please....?

I don't have a recipe as such but I make a bacon quiche by frying chopped bacon, putting that and some grated cheese in a pre cooked base, for a big plate sized quiche I'd put 4 eggs in a bowl and 4 large dollops of milk, whisk with herbs and then pour over, should just cover all the cheese.
Then oven GM6 for 20 ish minutes.
Another good one is lightly cooked spinach in a layer across the bottom of the pastry and then cheddar and ricotta mixed up and dumped over the top, add eggs and milk as above.

Always better to keep it simple imo!

Exactly as above but I don't even bother with the blind baking.

And lots of herbs and cheese make it loverly! I put the cheese on after the egg - makes the cheese top crustier.

You can vary the additive to the eggs - sometimes I use creme fraiche, double cream ot just milk.

Sometimes I make it with smoked salmon and spring onion, or asparagus and cheese, or bacon and spinach.

Never tomato - goes too soggy.

Just experiment.

Btw its called flan in our house - real men don't eat quiche!

I love quiche, but find the pastry case a bit of a faff, so I buy foil flan tins, make a big batch of pastry and line them all and then freeze them. Often put wholegrain mustard in the pastry and an egg. Also, half and half with wholemeal flour is really lovely, goes really crispy.

That way, if you have any broc, cauli, baby carrots, courgette, or other veggies needing to be used up, quiche is then a really quick and easy option. Just a quick sautee of whatever veggies you've got (might need to steam some veggies for a minute of two, but leave really aldente), chuck it in the pastry case and add eggs beaten with milk or cream.

Couple of nights ago I sauteed leek and garlic with mushrooms and spinach, and then added some chopped Quorn bacon. Mixed in some grated cheddar, dumped in frozen pastry case, added 1 egg and a drop of milk beaten together (wasn't room for any more eggs!!!), bit more grated cheese for the top and slammed it in the oven. It was blummin' gorgeous.
