Do they keep in an airtight container in the fridge if they're chopped?

Should do for a day or so but better leaving them whole until you need them.

Yes. Might not look so creamy in the middle but chuck them in a tomato sauce for pasta or fry with some garlic and bacon and no-one will ever know.

they freeze well (but only if you want to cook them as they go mushy)

do you freeze them whole or chopped?

planning ahead for when all my courgette plants give me courgettes at the same time!!!

I chop them first and freeze in in meal size portions.

Before freezing you need to blanche them first for 1 minute in boiling water. Drain and then immediately plunge them into iced water to cool. Drain, then dry on kitchen paper. Store for up to 12 months.

To thaw and serve - cook from frozen in boiling water for about 3-4 minutes or in the microwave with very little water for 4-5 minutes, stirring occasionally. Or thaw at room temp and fry in olive oil or butter.

I'm exactly the same southeastastra.Put it in a hidden veg sauce for annabel karmel's kids pizza for my DC's who are incredibly fussy.All good so far.Fingers crossed!

Grated courgette is easily hidden in shepherd's pie.

Unfortunately it didn't go quite as planned.They ate all usual toppings but gave out about how awful the sauce was!Typical.
Sorry,not trying to make this a fussy eaters thread,but seriously,they'd bawk at shepherds pie.

fry with onion and garlic, cook for 20 mins in stock, add dolcelatte cheese, whizz in the liquidiser - nom nom!
