Give me your best dish for kids now and us later

During the week DSs have dinner at around 5 and I always eat with DH after they have gone to bed.

I feel like I'm always cooking (actually that's not true as DH cooks in the evening as I can't face it again) so I am trying to menu plan so either I can make our dinner at the same time as DSs or DSs can have our leftovers reheated the next day.

So tonight, DSs had chicken with sweet potato wedges and we are having sweet potato, roasted veg and halloumi later - but it's all already chopped and ready to go in the oven.

Tomorrow night I am planning pasta bake which we can reheat.

What are your best reheatable or 2 birds with 1 stone recipes.

Actually, '2 birds with 1 stone' doesn't sound that appetising does it.

What about a cottge pie -small 1 for your DS's and another to heat later for you .
Also roast veg couscous with grilled chicken /fish.slow cooker dishes you can leave in for another 1/2hrs.

cottage

stew and dumplings

fish pie/cottage pie/savoury crumble. can either reheat of jhust make 2- one for kids and one for you

cous cous with roasted veg and "something". the something could be chicken portions for example, dss would have theirs early and yours could be left in the fridge ready to just go in the oven a bit later

Thanks. I don't have a slow cooker and, although I love the sound of it, DH would kill me if I added another kitchen appliance!

Cottage pie is my default dinner and DH won't eat fish so fish pie is out. But roasted veg and couscous could work.

yesterday - how would one go about making savoury crumble?

I often make something for the children and then chilli it up for DH eg bolognese, chicken parmesan, spicy pork meatballs, fajitas etc

You don't need a slow cooker, just a large lidded pan to go on top of the stove or a decent casserole dish to go in the oven. That would be the easiest way to do a 'double dip' meal where you just leave enough for you and hubby keeping hot and only have ot prepare pasta/pots/pittas to go with it.

lasagne always tastes better heated up the next day!

mineostrone soup and meat balls.

easy, cheap and soup can be re-heated.

i just cube up lots of veg, add stock, herbs, and then break up cheap spaghettii in it, and then oven bake either pork or beef mince meat (fresh basil leaves , torn and mixed in work well) rolled in to balls.

serve soup with meatballs on top with grated cheese.

i do this at the end of the week to use up the left over veg in the fridge.

home made macaroni cheese with bacon, onions and mushrooms, all pre-fried and mixed in......dont make this too often, as i like too much!!

ooh - meatball soup sounds good.

Some great ideas

What about a savoury rice dish? I use either chicken or prawns and veg such as peas, sweetcorn, peppers etc. Basically add what you like! Fry it up and add cooked rice. Is fine to re-heat.

Pinkmarshmallow · 10/05/2010 13:05

i like that idea, chunkamatic.
