Have got a veggie box - need a recipe for veg curry

Today had our first Abel and Cole veggie box delivered but am stuck as to what to do with it. Fancy making a vegetable curry that I can batch cook and freeze. None of us likes anything hotter than a tikka masala! Anyone got a recipe? something simple would be fab as I am not the worlds greatest cook!
In the box we have
Onions,
potatoes
leeks
carrots
courgettes
asparagos

Jamie Oliver has a couple of good ones on his site - for goodness sake, don't waste the asparagus in a curry though! Personally I'd use the onions and the potatoes, a few carrots and leeks plus lentils or chickpeas.

I'd fry onion, garlic, ginger in a bit of oil on a low heat. Then add cumin powder and seeds, turmeric, black pepper, mustard seeds and either a chopped red chilli or some chilli flakes (start with half a teaspoon, you can always add more later). cook a minute or two more. Add about six finely chopped fresh tomatoes and some stock. Cook for ten mins. Add potatoes, carrots, leeks - cook for ten mins. Add a drained tin of chickpeas. Cook for ten mins. Add a couple of spoons of natural yoghurt, warm through. Lots of fresh coriander. Yum. Keep adjusting water levels, spice levels as you see fit.

that sounds yummy, but I was hoping for more of the 'chuck in a teaspoon of mild curry powder' type deal as we dont have all those bits and bobs in the house

Do you have any of the pastes like Pataks Tikka Masala paste or Red Thai Curry Paste??

If you do you would just cook the chopped onions, then add a spoon or two of the paste and cook it for a minute, then add the chopped veg, a tin of tomatoes and some veg stock or a tin of coconut milk and let it cook till the veg is tender.
