Baked roast chicken breasts - how to prepare? URGENT! Numpty question alert...

I have two chicken breast fillets for dinner to make. I have made them before and they haven't come out great.

Should I brush them in olive oil/ butter before baking? How long should I cook them for and should I be basting them half way through?

I wrap each one in a piece of foil smeared in margarine or oil and do them for about 30 minutes - you don't have to baste them because of th wrapping. HTH

I wrap mine in bacon, sprinkle with herbs (usually thyme & oregano) and a bit of garlic pepper & bake for about 35 mins with a tablespoonful of water in the bottom of the dish to keep them moist.

Can't do bacon as haven't got any in but if I do the foil thing will they go crunchy on the skin as I really like that?

Like the water idea - will try that!

Yep, wrap in a tightly closed but loose parcel of foil. With some butter and seasonings. Chicken breast has no bone and very little fat so always get very "dry" when you roast them.

If you put them in a roasting pan, skins side up, with a glass of wine, one of water and some herbs, the meat underneath will stay juicy and the skins really crisp up. No need to cover with foil then.
