Any good ideas for couscous

Does anyone have any nice recipes for couscous? Have tried it with roasted veg but didn't come out well! Thanks

What went wrong with the roasted veg meal? Was the couscous too wet? Sometimes you have to experiment with the amount of stock that you add.

Another good tip is that M&S sell a couscous paste that you add to the couscous and stock. It is lovely and fiery - probably better just for adults

i love couscous and my mil cooked it with chicken in a white sauce, i have had the packet stuff but proper homemade that took her about an hour to make (it was put in a steamer type thingy)

Its traditionally served with a soup. The couscous mops up the soup. Too dry with just roasted veg.

Cook any favourite broth or meat soup, dont add potatoes.

Couscous is meant to be served plain with a very saucy tagine (stew) as it soaks up the flavours and juices of the stew.

Bad idea to serve it with something dry like roasted veg.

mediterranean couscous salad

i make this without the green leaves though, and often take it on long journeys to have for lunch. it's loads better than a squashed sandwich.

mehdismummy - I have made up a sort of compromise method between teh quick soaking/boiling (which never works for me) and the traditional steaming, here it is:

Pour the amount of boiling water over pre-cooked couscous that it tells you to on teh packet and let it soak in. After a minute or two, stir it, and fluff it up with a fork.
Then put it in the steamer over the soup for 15 minutes.
Turn it out, and press teh lumps out with a spoon, and oil/salt it.

It worked ok with some barley couscous that I bought at Sainsburys. This was fine grained - Im not sure how well it would work with medium or coarse grains.

Have with tomatoes, chickpeas and tuna (1 tin of each, smalll of tuna) and harissa/chilli.

Or with salmon, roasted peppers, with orange zest, juice and raisins.

Or with chicken, cooked with vegetable stock, and preserved lemons, adding the cousous to the chicken pan and then adding the stock.

i do it with mushrooms stewed in a really garlicky butter with lots of chopped parsley. in fact that is what i will make for my dinner after ds is in bed.
