Inspiration please... veggy friend coming to stay (with her DH and DD) and my OH has to have meat!

Just planning ahead really

Have friend and her DH and DD coming to stay for 4 days...

she is a strict vegetarian (eats free range eggs and dairy) and also very fussy... doesnt really like many veg, just peas / carrots / brocolli i think....
she will pick bits of onion and bits of tomatoe out of sauces etc.... doesnt eat nuts

Her DH is severly allergic to fish and nuts, but otherwise eats anything
Their DD eats most things but doesnt really llike meat (as mummy doesnt like buying or cooking it)

My OH LOVES meat / fish and if we go more than a day without any complains...

also my OH and her DH have monstor appetites... they both eat at least 3 times the average adult portion!!!

So Im just trying to think ahead about what we can eat....
Also i LOVE cooking, and her DH espeicallly LOVES my "proper" home cooking as my friend really doesnt cook from scratch, where as i only cook from scratch!

Am thinking of a big macaroni cheese with salad (will have loads of salad componants growing in garden)... perhaps with garlic bread?

Maybe a roast chicken with broccolli peas and carrots and roast potatoes (and ask friend to bring a veggy meat thing?)

maybe pizza with salad and garlic bread? (is that too the the same as mac cheese?)

Jacket potatoes with sausages (for meat eaters) and cheese and beans and salad..

maybe a takeaway where we can all just choose what we want?

Breakfasts:
Just cereal / toast (with home made bread and home made jam / peanut butter / marmite etc)
Perhaps pancakes... syrup and blueberries etc

doing a full english so veggy friend can have egg /beans / toast / mushrooms and the rest can add on sausages and bacon

No idea about lunches...
friend wont eat any home made soup
will we get bored with sandwishes / rolls / crisps.

For puddings:

Hope to bake a cake and maybe some biscuits / flapjacks.... (might do this as an activity with her DD?)

maybe strawberry pavlova?

could make some home made icecream, they love that!

Any other ideas for things that could be meaty and veggy (no fish or nuts) for the same meal?

Risotto? You could do a veggie one, and stir in bacon for meat for those who want it?

Sounds like you have it well covered. I don't know if you've asked her if there is any meal she likes in particular or maybe get her to cook something she likes for everyone to enjoy.

Risotto primavera - with fresh peas, asparagus and broad beans (not sure they are in season yet). Organic parmesan is not that expensive compared to regular better still get pecorino its cheaper still. Yummy!

What about things like veggie fingers? The Birds Eye ones are not bad.

There is an Annabel Karmel recipe for sweetcorn pancakes - they are delicious anytime of the day. The recipe was in Mother & Baby a couple of months ago.

Lunches - what about spanakopita or quiches, etc.? Risottos, maybe pasta bakes with lots of veg that she eats where you could add grilled chicken for the meat-eaters? Korean pancakes (lots of veg and loved by most kids!), what about stir fries with meat cooked separately and then added? A vegetarian chili is handy to have to serve in a taco salad or over a jacket potato?

Ooh and a favourite for a veggie friend - portabello mushroom burgers when the rest of us are having beef - can pile lots of garden goodies on top too.

Sounds like you have a great list already!

Quiche sounds like a great idea... and adding bakon (or other meat) to pasta / stir fry etc

I know my fussy freind wont eat sweetcorn or mushrooms but they sounds like a really yummy recipies to try on some other time.
